Ingredients
- 8 cups chopped ripe mangoes
- 1 ounce fresh ginger, sliced thinly
- 1/2 cup lime juice
- 5 cups sugar
Recipe
- 1 cook all ingredients in a heavy saucepan, boiling rapidly and stirring occasionally until thickened.
- 2 ladle into prepared jars leaving a 1/4" headspace. process in a boiling water bath for 10 minutes. adjust time according to your altitude.
