Peach Mint Salsa

Ingredients
- 2 cups peaches, peeled and chopped
- 1/4 cup red onion, finely chopped
- 1/4 cup green pepper, finely chopped
- 1 tablespoon jalapeno pepper, finely chopped
- 2 tablespoons honey
- 1/4 teaspoon salt
- 1 lime, juice and zest of, grated
- 2 tablespoons fresh mint, chopped
Recipe
- 1 combine peaches, onion, peppers, honey, salt, line rind and juice in a medium saucepan.
- 2 bring to a boil over high heat, reduce heat and boil gently, uncovered for 5 minutes, stirring occasionally.
- 3 stir in mint and cook for 1 minute.
- 4 ladle salsa into jars.
- 5 process 10 minutes for pint jars in boil water bath.
