Peach Mint Salsa

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • 2 cups peaches, peeled and chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup green pepper, finely chopped
  • 1 tablespoon jalapeno pepper, finely chopped
  • 2 tablespoons honey
  • 1/4 teaspoon salt
  • 1 lime, juice and zest of, grated
  • 2 tablespoons fresh mint, chopped

Recipe

  • 1 combine peaches, onion, peppers, honey, salt, line rind and juice in a medium saucepan.
  • 2 bring to a boil over high heat, reduce heat and boil gently, uncovered for 5 minutes, stirring occasionally.
  • 3 stir in mint and cook for 1 minute.
  • 4 ladle salsa into jars.
  • 5 process 10 minutes for pint jars in boil water bath.
