Sauteed Dandelions

Ingredients
- Servings: 6
- 2 bunches greens, washed well
- 2 tablespoons olive oil
- 1/4 red onion, very thinly sliced
- 1 garlic clove, pressed
- 1 pinch red pepper flakes
Recipe
- 1 cut stems and soak greens in sink full of water. agiate, drain and repeat to make sure all sand is removed. chop roughly.
- 2 place in salted boiling water and blanch for 4-5 minutes.
- 3 meanwhile, add oil in fry pan on medium heat add garlic and onion and red pepper flakes and heat till onions are soft and garlic fragrant.
- 4 add blanched stems to oil and toss. saute until tender, 10 minutes or so.
