Roast Suckling Pineapple

Ingredients
- Servings: 6
- 1 ripe pineapple
- 8 whole cloves
- 1 cup maple syrup
- ground cinnamon
- 1/4 cup unsalted butter, melted
Recipe
- 1 with a sharp knife, remove skin and eyes from a whole pineapple, leaving the spiky leaves intact. replace 8 of the eyes with the cloves. remove some of the middle leaves and center the pineapple on a spit. cover the leaves with foil.
- 2 mix together the maple syrup, cinnamon and melted butter.
- 3 rotate the pineapple over the grill, basting frequently with the maple syrup mixture, until browned and juicy and heated through, about 10 minutes.
