Passover Poached Eggs Over Matzoh And Guacamole

Ingredients
- 1 avocado
- 2 teaspoons lemon juice
- 1/2 tomato (chopped)
- 1/3 onion (chopped)
- salt (to taste)
- 1 egg
- 1 tablespoon vinegar
- 1/2 piece matzohs
- cheese (optional)
Recipe
- 1 mash the avocado.
- 2 add the lemon juice, tomato, onion,, and salt to the avocado and mix.
- 3 spread guacamole over the matzoh.
- 4 to poach the egg, bring a pot of water to boil.
- 5 add vinegar to the boiling water.
- 6 break in the egg to the boiling water. turn off the heat. allow the egg to sit for 3-7 minutes (depending on whether you prefer your eggs runny or more solid). remove the poached egg from the water and place it on top of the guacamole. serve immediately.
