Santorini Feta & Spinach Pizza

Ingredients
- 1 pizza crust (homemade preferably or store bought)
- 1/3 cup tomato sauce (homemade is best)
- 4 ounces goat cheese
- 8 ounces feta cheese
- 1/3 cup mayonnaise (not low fat)
- 3 garlic cloves
- 1/4 cup kalamata olive (chopped)
- 1/2 chili pepper (minced)
- 1 teaspoon dried oregano
- 1 small red onion (sliced into thin rings)
- 1 cup baby spinach leaves
- 1 cup mozzarella cheese (shredded)
Recipe
- 1 prebake pizza crust in a 400f oven for 5 minutes.
- 2 spread tomato sauce over crust.
- 3 mix together the goat cheese, feta, mayo, garlic, olives, chili pepper & oregano.
- 4 spread this mixture over the tomato sauce.
- 5 scatter on the red onions, followed by the spinach.
- 6 sprinkle on the mozzarella.
- 7 enjoy with a glass of vino and pretend you are overlooking the blue waters of greece.
