Lemon Butter Potatoes

Ingredients

- 3 potatoes, peeled, cut in half, sliced
- 1 tablespoon extra light olive oil
- 3 tablespoons butter
- 2 teaspoons dried chives
- 1/2 teaspoon salt
- 2 tablespoons lemon juice
- 1/2 teaspoon ground black pepper
Recipe
- 1 heat oil in large frying pan.
- 2 add potatoes when oil is hot.
- 3 cover and cook 8-9 minutes, stirring 1-2 times.
- 4 while potatoes cook, mix other ingredients in small saucepan and heat.
- 5 add butter sauce.
- 6 cook uncovered on med for 4-5 minutes.
- 7 serve warm.
