Lemon Butter

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 3 eggs, beaten
  • 1 cup sugar
  • 1 tablespoon lemon rind, grated
  • 1/2 cup lemon juice
  • 60 g butter, chopped

Recipe

  • 1 combine all ingredients in a heat-proof bowl.
  • 2 whisk constantly over simmering water until the mixture coats the back of a metal spoon.
  • 3 remove from the heat and pour into warm, sterilized jars.
  • 4 when cool, store in the refrigerator till required.
