Pam's Lemon Meringue Pie

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • 1 cup sugar
  • 3 tablespoons cornstarch
  • 1 1/2 cups cold water
  • 3 egg yolks, beaten
  • 1/4 cup lemon juice
  • 1 tablespoon margarine
  • 1 9 inch pie shell, baked
  • 3 egg whites
  • 1/3 cup sugar

Recipe

  • 1 in pot, cook 1 c sugar, cornstarch and water.
  • 2 cook until smooth.
  • 3 add egg yolks slowly, stirring constantly until boiling (about 1 minute).
  • 4 remove from heat and add juice and margarine.
  • 5 allow to cool and add to pie shell.
  • 6 beat egg until foamy, then add 1/3 c sugar and continue beating until stiff peaks form.
  • 7 bake in 350 degree oven for 15-20 minutes, or until meringue is nicely browned.
