Hash Browns Frittata

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 1 tablespoon vegetable oil
  • 2 cups frozen hash brown potatoes
  • 1/2 cup chopped green peppers or 1/2 cup red pepper
  • 1/4 cup chopped onion
  • 6 eggs
  • 1/4 cup milk
  • salt and pepper
  • 1 cup shredded cheddar cheese

Recipe

  • 1 in a medium skillet heat oil over medium heat.
  • 2 add hash browns and cook for a few minutes until heated through, stirring occasionally.
  • 3 stir in green or red pepper and onions.
  • 4 cover and cook over medium heat for 6 to 7 minutes, stirring occasionally.
  • 5 in a medium bowl, whisk together eggs, milk, salt and pepper.
  • 6 pour mixture evenly over hash browns; using turner, poke hash browns in several places to help mixture seep through to skillet.
  • 7 cover and cook over medium-low heat for 6 to 7 minutes or until eggs are just about set.
  • 8 sprinkle cheese over top.
  • 9 cover and cook for 2 to 3 minutes or until cheese is melted.
  • 10 loosen edges and cut into wedges.
