Pepperoni English Muffin Pizzas

Total Time: 30 mins Preparation Time: 25 mins Cook Time: 5 mins

Ingredients

  • Servings: 2
  • 4 english muffins, split
  • 1 cup tomato sauce
  • 2 tablespoons fresh herbs, chopped (such as basil, parsley, or oregano, or all)
  • 2 ounces pepperoni, thinly sliced
  • 4 ounces mozzarella cheese, shredded
  • 2 tablespoons fresh oregano, chopped

Recipe

  • 1 preheat the broiler.
  • 2 toast the english muffins in the broiler or toaster until they're golden brown and crisp.
  • 3 arrange the muffins, cut side up, on a rimmed baking sheet.
  • 4 stir the herbs into the tomato sauce and spread 2 tablespoons of the sauce over each english muffin half.
  • 5 top off the pizzas with pepperoni, dividing it evenly; sprinkle each with mozzarella and top with the oregano.
  • 6 place the pizzas under the broiler for about 2 minutes, until the cheese melts and the pepperoni is sizzling.
  • 7 serve warm.
