Pepperoni English Muffin Pizzas

Ingredients

- 4 english muffins, split
- 1 cup tomato sauce
- 2 tablespoons fresh herbs, chopped (such as basil, parsley, or oregano, or all)
- 2 ounces pepperoni, thinly sliced
- 4 ounces mozzarella cheese, shredded
- 2 tablespoons fresh oregano, chopped
Recipe
- 1 preheat the broiler.
- 2 toast the english muffins in the broiler or toaster until they're golden brown and crisp.
- 3 arrange the muffins, cut side up, on a rimmed baking sheet.
- 4 stir the herbs into the tomato sauce and spread 2 tablespoons of the sauce over each english muffin half.
- 5 top off the pizzas with pepperoni, dividing it evenly; sprinkle each with mozzarella and top with the oregano.
- 6 place the pizzas under the broiler for about 2 minutes, until the cheese melts and the pepperoni is sizzling.
- 7 serve warm.
