Ingredients
- 1 tablespoon cornstarch
- 6 tablespoons freshly-squeezed lemon juice (about)
- 3/4 cup cold water
- 1/4 cup sugar
- 1 lemon
Recipe
- 1 in a small bowl, add cornstarch. mix a little lemon juice with a little water and add to cornstarch. beat to a smooth paste.
- 2 in a medium saucepan, heat remaining lemon juice and water. add sugar, stirring constantly, until dissolved. pour onto cornstarch paste, beating well until smooth.
- 3 return to saucepan over low heat, stirring constantly, until thickened and clear. using a zester, add the peel of 1 lemon.
- 4 serve hot.
