Guadalajaran Quesadillas

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • Servings: 2
  • 2 tablespoons vegetable oil
  • 1 small onion, chopped
  • 1 garlic clove, minced
  • 1/4 teaspoon cumin
  • 1 teaspoon oregano
  • 1/4 cup tequila
  • 6 ounces fresh spinach
  • 24 inches corn tortillas
  • 1/2 cup grated reduced-fat monterey jack cheese

Recipe

  • 1 in medium sauce pan, heat oil over medium heat. add onions and saute for 5 minutes. stir in garlic, cumin and oregano and saute for 2 minutes. add tequila and simmer for 1 minute. stir in spinach. cover, reduce heat to medium-low and steam for 5 minutes. uncover and cook for 3 minutes to evaporate liquid.
  • 2 place one tortilla in sillet over medium heat. sprinkle with 1/4 cup cheese. top with 1/4 cup spinach mixture and second tortilla. cook 2 minutes, each side. repeat with remaining ingredients.
