Sausage With Warm Vinaigrette

Ingredients

- 5 italian sausage
- 3 tablespoons olive oil
- 3 tablespoons balsamic vinegar
- 1 tablespoon dijon mustard
- 1 (10 ounce) package frozen spinach
- 2 tablespoons butter
- 1 teaspoon lemon juice (may be omitted)
- salt and pepper
- parmesan cheese
Recipe
- 1 cook sausage as directed.
- 2 remove sausage when fully cooked and set aside leaving your pan on same heat.
- 3 mix together oil, viniger, and mustard and put in pan.
- 4 deglaze the pan with a whisk breaking up the mustard till sauce is even, scraping up all the dark pieces.
- 5 place sausage back in pan, cover with sauce, remove from heat and keep warm.
- 6 cook spinach as directed.
- 7 melt butter with lemon juice and mix with spinach.
- 8 season with salt and pepper.
- 9 serve sausage over spinace with sauce and parmisean cheese.
