Skillet Scalloped Potatoes

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 2
  • 1 tablespoon butter
  • 3/4 lb russet potato, peeled and thinly sliced
  • 1/2 cup thinly sliced red onion
  • 1 1/2 teaspoons flour
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 cup milk
  • 1 tablespoon chopped parsley

Recipe

  • 1 in a heavy nonstick skillet, melt ½ tablespoon butter. off heat, spread half of potato slices in skillet and top with red onion.
  • 2 sprinkle on half the flour, salt and pepper. top with remaining potato slices, flour, salt and pepper and dot with remaining butter.
  • 3 pour milk over potatoes and bring to a boil over high heat. reduce heat to medium-low, cover and cook until potatoes are tender, about 12 minutes.
  • 4 sprinkle with parsley before serving.
