Spicy Black Bean Burgers

Ingredients
- 1/4 small onion, diced
- 1 small carrot, grated
- 2 garlic cloves, minced
- jalapeno pepper (optional)
- 1 (15 ounce) can black beans, drained
- 1/4 cup saltine crumbs
- salt
- pepper
- cumin
- dried chipotle powder
Recipe
- 1 saute onion, carrot, and jalapenos in a little oil, until softened. add garlic and saute until garlic is soft.
- 2 add salt, pepper, cumin, and chipotle powder and cook another minute or two longer.
- 3 combine vegetables and beans in a bowl, and mash with a fork.
- 4 add cracker crumbs and mix thoroughly.
- 5 form into 4 patties.
- 6 coat the bottom of a large skillet with oil and heat over medium high heat.
- 7 fry the patties until they are brown and a little crunchy.
- 8 i like these wrapped in tortillas, with a little lettuce and cheese on top.
