Saute Spinach With Garlic

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 4 cloves garlic, sliced thinly lenthwise
  • 2 lbs fresh spinach, washed and leaves damp
  • salt & freshly ground black pepper
  • cooking spray

Recipe

  • 1 in a large sauté pan, heat olive oil over medium heat.
  • 2 add garlic, and cook until golden brown, 2 to 3 minutes.
  • 3 using a slotted spoon, transfer garlic to paper towels; reserve.
  • 4 discard oil.
  • 5 spray pan with cooking spray, and heat over medium heat.
  • 6 coarsely chop spinach and stalks.
  • 7 working in batches, add damp spinach to the pan.
  • 8 cover, and cook until spinach just begins to wilt, 4 to 5 minutes.
  • 9 transfer the cooked spinach to a metal bowl, and cook remaining spinach.
  • 10 season with salt and pepper.
  • 11 sprinkle reserved garlic over spinach, and serve warm.
