Gruyere Cheese Sauce

Ingredients

- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 1/2 cups whole milk
- 1/2 cup grated gruyere cheese
- kosher salt, to taste
- fresh ground pepper, to taste
Recipe
- 1 melt butter in small saucepan over medium-low heat.
- 2 add flour; stir 2 minutes (do not brown).
- 3 gradually whisk in 1 1/2 cups milk.
- 4 increase heat to high; bring to boil, then reduce heat to medium and simmer until mixture is thickened, stirring constantly, about 4 minutes.
- 5 remove from heat.
- 6 add cheese, stir until melted.
- 7 season with salt and pepper.
- 8 do ahead: this cheese sauce can be made 2 hours ahead.
- 9 let stand at room temperature.
- 10 rewarm before using, adding more milk if sauce is too thick.
