Double Apple Muffins

Ingredients
- 1 1/3 cups all-purpose flour
- 1 cup oats, uncooked (old fashioned or quick)
- 1/3 cup brown sugar, packed
- 1 tablespoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt (optional)
- 2/3 cup 1% low-fat milk
- 1/3 cup apple juice
- 1/4 cup canola oil
- 1 egg, beaten
- 3/4 cup apple, peeled, & chopped (about 1 medium sized apple)
Recipe
- 1 heat oven to 400f and grease or line 12 muffin cups.
- 2 combine dry ingredients in a medium bowl.
- 3 add the remaining ingredients except the chopped apple, mixing just until moistened (do not overmix!).
- 4 gently fold in the apples.
- 5 fill cups 2/3 full.
- 6 bake 20-22 minutes or until golden brown.
