Easy Baked Pineapple

Ingredients

  • 1 egg
  • 1 (15 ounce) can crushed pineapple
  • 1/2 cup milk
  • 1/2 cup white sugar
  • 3 tablespoons tapioca
  • ground cinnamon

  • preheat oven to 350 degrees f (175 degrees c).
  • whisk egg in a bowl; mix pineapple, milk, sugar, and tapioca into egg. pour mixture into an 8-inch square baking dish.

Cooky Corn Cake

Ingredients

  • 1 (14.75 ounce) can cream-style corn
  • 1/2 cup packed dark brown sugar
  • 3/4 cup white sugar
  • 3 eggs
  • 1 cup vegetable oil
  • 1 tablespoon baking powder
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 cup chopped walnuts
  • 1/2 cup raisins
  • 4 tablespoons unsalted butter
  • 1/2 cup packed dark brown sugar
  • 1/4 cup heavy whipping cream
  • 2 1/2 cups confectioners' sugar

Recipe

  • preheat oven to 350 degrees f (175 degrees c). grease and flour one 13x9 inch pan.
  • combine the creamed corn with the white sugar and 1/2 cup of the dark brown sugar. stir in the eggs and the oil.
  • combine the baking powder, flour, baking soda, salt and ground cinnamon. add the nuts and raisins.
  • add the flour mixture to the corn mixture and stir until just combined. pour batter into the prepared pan.
  • bake at 350 degrees f (175 degrees c) for 30 to 35 minutes. let cake cool completely then frost.
  • to make frosting: bring the butter and 1/2 cup dark brown sugar to a boil. remove from the heat. add the heavy cream and the confectioners' sugar. mix until of frosting consistency. add more confectioners' sugar if necessary. use to frost cooled cake.

Jimmy's Clam And Corn Fritters

Ingredients

  • 1 1/4 cups finely ground cornmeal
  • 1 (14.75 ounce) can cream-style corn
  • 1 (6.5 ounce) can minced clams, drained
  • 1 small onion, finely chopped
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 teaspoon white sugar
  • 1/4 cup milk, or as needed
  • 1 quart vegetable oil for frying

  • 1 cup regular white grits
  • 8 ounces shredded sharp cheddar cheese

  • 1 tablespoon worcestershire sauce
  • 1/2 teaspoon salt
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon hot sauce
  • 3 large eggs, beaten

  • 1 (15.25 ounce) can whole kernel corn, drained
  • 1 (15 ounce) can cream-style corn
  • 1 cup sugar
  • 1 egg
  • 1/4 cup butter, melted and divided
  • 2 sleeves buttery round crackers (such as ritz®), crushed and divided

  • preheat oven to 325 degrees f (165 degrees c).
  • stir whole kernel corn, cream-style corn, sugar, egg, and about 3/4 of the melted butter together in a casserole dish. fold about half the crushed crackers into the corn mixture. sprinkle remaining crushed crackers over the top of the mixture and drizzle with the remaining butter.
  • bake in preheated oven until beginning to brown, 25 to 30 minutes.

prosciutto potato bake

Ingredients

  • 2 tablespoons olive oil, divided
  • 1/2 pound sliced prosciutto, or more to taste
  • 1/2 pound small potatoes, sliced thinly lengthwise
  • 2 tomatoes, sliced
  • 1 (4 ounce) ball fresh mozzarella cheese, thinly sliced
  • 1/2 (6 ounce) jar sliced mushrooms, drained
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon finely chopped green onion

  • preheat oven to 350 degrees f (175 degrees c). lightly grease a small casserole dish with olive oil.
  • heat 1 tablespoon olive oil in a skillet over medium-high heat. cook prosciutto in hot oil until crisp, 4 to 6 minutes per side. drain cooked prosciutto on a plate lined with paper towel; pat slices with paper towel to blot excess grease. crumble prosciutto.
  • spread about half the potatoes into the bottom of the prepared casserole dish. arrange about half the mozzarella slices atop the potatoes. repeat layering with remaining potatoes and cheese. drizzle 1 tablespoon olive oil over the top layer of cheese. sprinkle crumbled prosciutto over the cheese layer.
  • arrange tomato slices around the edges of the casserole dish. sprinkle mushroom slices inside the edges of the tomato border. season with salt, pepper, oregano, garlic powder, and green onion. cover casserole dish with aluminum foil.
  • bake in preheated oven for 50 minutes. remove and discard foil and switch oven to broil. continue cooking under the broiler until the top is browned, 5 to 10 minutes more.

sweet potato casserole with white raisin

Ingredients

  • 2 eggs, beaten
  • 1 cup white sugar
  • 1/2 cup butter, melted
  • 1/2 cup white raisins, or more to taste
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 4 1/2 cups mashed cooked sweet potato
  • 1 cup light brown sugar
  • 1/2 cup all-purpose flour
  • 1/2 cup butter, softened
  • 1 cup chopped pecans (optional)

  • preheat oven to 350 degrees f (175 degrees c). grease a 9x13-inch baking dish.
  • mix eggs, sugar, melted butter, raisins, milk, and vanilla extract in a large mixing bowl. add mashed sweet potatoes; stir to combine. spread the sweet potato mixture into the prepared baking dish.
  • mix brown sugar and flour together in a small bowl. mash butter into the mixture with a fork until crumbly; add pecans and stir. sprinkle the brown sugar mixture over the sweet potato mixture.
  • bake in preheated oven until golden brown, about 30 minutes.
