Easy Chicken Gumbo

Total Time: 30 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 1 whole chicken, boiled,cooled & shredded
  • 1 tablespoon flour
  • 1 cup chicken broth
  • 1 (28 ounce) can diced tomatoes, undrained
  • 1 (1 ounce) can tomato sauce
  • 4 stalks celery, diced
  • 1 large onion, diced
  • 1 bag frozen okra
  • 4 tablespoons gumbo file
  • 1 teaspoon cayenne
  • salt and pepper
  • hot cooked rice

Recipe

  • 1 saute onion and celery until tender.
  • 2 in a dutch oven or large pot make a roux out of flour and chicken broth.
  • 3 add the tomatoes and tomato sauce along with shredded chicken.
  • 4 add salt and pepper to taste.
  • 5 add file gumbo, cayenne and okra.
  • 6 simmer for 30 minutes.
  • 7 serve over hot, cooked rice.

Easy Chicken Cordon Bleu With Mushroom Sauce

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breasts
  • 6 slices ham (i use old fashioned or honey)
  • 6 slices swiss cheese
  • 1 (10 1/2 ounce) can mushroom soup (i really like campbell's golden mushroom)
  • 2 cups sour cream
  • 1 cup fresh sliced mushrooms

Recipe

  • 1 use a meat pounder to flatten the chicken breats.
  • 2 place 1 slice of ham and 1 slice of cheese in the center of each breast.
  • 3 roll up and place seam side down in a casserole dish.
  • 4 securing with a toothpick if necessary.
  • 5 bake, covered, for 20 minutes at 350 degrees or until the chicken is no longer pink and juices run clear.
  • 6 while it is baking, mix together remaining ingredients.
  • 7 pour over cooked chicken and bake until sauce .
  • 8 i usually serve this over egg noodles.

Easy Chicken Cordon Bleu

Ingredients

  • Servings: 6
  • 6 boneless skinless chicken breasts
  • 6 slices cooked ham
  • 6 sticks swiss cheese (1-inch thick 2-inch long)
  • paprika
  • salt and pepper
  • 1 teaspoon chicken base
  • 1 (10 3/4 ounce) can ounces cream of mushroom soup
  • 1 teaspoon oil
  • 5 ounces milk
  • 3 -4 ounces water
  • toothpick

Recipe

  • 1 pound chicken flat.
  • 2 place slice of ham on chicken and a stick of cheese on smaller end of chicken roll up and afix shut with toothpicks.
  • 3 in skillet heat oil and seal chicken shut and brown outside of chicken a little bit place chicken in deep casserole dish.
  • 4 in bowl mix soup, water, milk, base and a dash of salt and pepper.
  • 5 pour soup mixture over chicken and sprinkle top with paprika.
  • 6 bake for 40-50 minutes at 350* until bubbly and brown on top.
  • 7 serve with rice.

Easy Chicken Curry

Ingredients

  • Servings: 4
  • 4 large skinless chicken breasts, cut into chunks
  • 3 tablespoons vegetable oil
  • 1 teaspoon mustard seeds, brown
  • 1 large onion, sliced
  • 3 garlic cloves, finely sliced
  • 400 ml coconut milk
  • salt
  • chopped spring onion, for garnish
  • 1 teaspoon paprika
  • 1/2 teaspoon ground turmeric
  • 1 1/2 tablespoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon cayenne pepper
  • 1 tablespoon lemon juice
  • 1/2 teaspoon salt
  • 75 ml water

Recipe

  • 1 in a bowl, mix all the marinade ingredients into a loose, smooth paste then place the cut chicken breasts side-by-side in a large, flat dish and coat both sides with the paste. the meat is best left to marinate for 30 minutes to one hour, but if you are in a hurry a few minutes will do.
  • 2 heat the oil in a deep frying pan and add the mustard seeds. when they start to pop and jump about in the pan, add the onion and garlic. cook until they are golden brown before adding the chicken and any extra paste from the marinade.
  • 3 fry over a gentle heat for about eight minutes before adding the coconut milk.
  • 4 increase the heat slightly and bring to a simmer.
  • 5 cook for a further 10-12 minutes until the sauce has thickened slightly, before seasoning with salt if necessary. garnish with chopped spring onion and serve with rice or naan bread.

  • 1 chicken, cut into pieces (or chicken pieces of your choice)
  • 1/2 cup plain flour
  • 1 teaspoon thyme
  • salt and pepper
  • oil
  • 2 cloves garlic, crushed
  • 250 g mushrooms
  • 8 small onions
  • 1 carton cream
  • 3/4 cup white

Recipe

  • 1 roll chicken pieces in flour seasoned with thyme, salt and pepper.
  • 2 fry in oil until chicken is golden brown.
  • 3 place chicken pieces in large ovenproof dish.
  • 4 arrange mushrooms and onions around chicken.
  • 5 mix together , cream and garlic.
  • 6 add mixture to chicken.
  • 7 cover dish and bake a moderate oven for 30 minutes.
  • 8 turn chicken once during cooking.

Easy Chicken Coconut 'curry'

Ingredients

  • Servings: 2
  • 8 ounces chicken breasts
  • 4 -5 small chilies (green and red)
  • 1 (8 ounce) can light coconut milk
  • 1 ounce fresh basil
  • salt

Recipe

  • 1 while slightly frozen or thawing, slice chicken into thin medallions.
  • 2 meanwhile, bring coconut milk and salt to simmer in a large, thick pan over low heat.
  • 3 when simmering, add chicken to pan. cover and keep at just a simmer. slice the small chilis lengthwise, discarding stem. use a knife to scrape off the seeds and rinse. add chilis to pan.
  • 4 when the chicken is done (~20 minutes for me) remove from heat and stir in whole basil leaves, unless the leaves are exceptionally large. let sit a few minutes for the flavors to mix.
  • 5 serve over white rice.

Yummy Sweet Potato Casserole

  • 1/2 cup white sugar
  • 2 eggs, beaten
  • 1/2 teaspoon salt

  • 1/2 cup milk
  • 1/2 teaspoon vanilla extract
  • 1/2 cup packed brown sugar
  • 1/3 cup all-purpose flour
  • 3 tablespoons butter, softened
  • 1/2 cup chopped pecans

  • preheat oven to 325 degrees f (165 degrees c). put sweet potatoes in a medium saucepan with water to cover. cook over medium high heat until tender; drain and mash.
  • in a large bowl, mix together the sweet potatoes, white sugar, eggs, salt, butter, milk and vanilla extract. mix until smooth. transfer to a 9x13 inch baking dish.
  • in medium bowl, mix the brown sugar and flour. cut in the butter until the mixture is coarse. stir in the pecans. sprinkle the mixture over the sweet potato mixture.
  • bake in the preheated oven 30 minutes, or until the topping is lightly brown.

  • pam® original no-stick cooking spray
  • 3 cups frozen bell peppers, strips (from 16-oz pkg)
  • 2 cups vertically sliced onions
  • 1 lb boneless skinless chicken breast, cut into thin slices
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 2 (10 ounce) cans ro*tel® original diced tomatoes & green chilies, drained
  • 8 flour tortillas, warmed (6 inch)

Recipe

  • 1 spray large skillet with cooking spray; heat over medium-high heat. add bell peppers and onion; cook 7 minutes or until tender, stirring occasionally. remove from skillet; set aside.
  • 2 add chicken to skillet. sprinkle with chili powder and cumin. cook 4 minutes or until no longer pink, stirring occasionally.
  • 3 return peppers and onion to skillet; add drained tomatoes. cook 2 minutes more or until hot. divide chicken mixture evenly between tortillas.

Easy Chicken Curry Slow Cooked

  • 1 (11 ounce) bottle trader joes thai red curry sauce
  • 3 chicken breasts
  • 1 eggplant
  • 1 cup chicken broth
  • 4 small yellow potatoes
  • 1 sliced carrot
  • 1 tablespoon basil
  • 1/2 chopped onion
  • 1 cup frozen green beans
  • 1 tablespoon coconut oil

Recipe

  • 1 wash and chop vegetables, add to pot.
  • 2 cube chicken and place in pot.
  • 3 pour sauce, oil, broth, and seasonings over mixture.
  • 4 set on high for 4 hours or low for 8. serve with rice if desired. i like brown rice or coconut rice with this. add sirracha to taste, or add a small jalapeño. this is good with the green or yellow curry flavor too. you can substitute any protein you like for the chicken, i often make this with tofu. a squeeze of fresh lime is also delicious. i add bell pepper, a can of bamboo, a few peanuts, or raisins to this as well sometimes.

Easy Chicken Fettuccine

Ingredients

  • Servings: 6
  • 1/2 cup butter
  • 2 lbs boneless skinless chicken breasts
  • 1 cup half-and-half or 1 cup cream
  • 1/3 cup freshly grated parmesan cheese
  • 1/4 cup green onion, chopped
  • 2 cloves garlic, minced
  • fresh parsley, chopped
  • fresh cracked black pepper
  • additional freshly grated parmesan cheese
  • to taste fettuccine, cooked

Recipe

  • 1 melt butter in skillet and saute chicken which has been cut into 2 inch chunks.
  • 2 when chicken begins to take on color, add garlic and green onions.
  • 3 saute a few minutes being careful not to burn garlic add remaining ingredients except parsley, cover and simmer over low heat until mixture thickens (you may need to add a little more parmesan cheese if you like it thicker) and chicken is tender and cooked all the way through.
  • 4 serve over cooked and drained fettuccine.
  • 5 sprinkle with fresh parsley, lots of cracked black pepper and additional parmesan cheese if desired.

Easy Chicken Enchilada Casserole

Ingredients

  • Servings: 8
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can cream of chicken soup
  • 1 (10 ounce) can rotel (original or hot)
  • 1/3 cup salsa
  • 2 1/2 teaspoons chili powder
  • 1 (14 ounce) bag tortilla chips (i use the yellow corn ones)
  • 1 (26 ounce) bag tyson fajita chicken strips (already cooked, you can also use deboned baked chicken)
  • 1 (16 ounce) bag colby-monterey jack cheese

Recipe

  • 1 spray baking dish with non stick spray.
  • 2 in a med size bowl mix together, mushroom soup, chicken soup, rotel, 1/3 cup salsa, 2 1/2 teaspoons of chili powder.
  • 3 layer tortilla chips so that they cover the bottom of the pan, i press down on them just to make them lay a little flat. add 1/2 of the soup mixture on top of the chips. place 1/2 of the chicken pieces on the soup mixture, then sprinkle that with 1/2 of the cheese. repeat the layers, chips, soup, chicken, cheese.
  • 4 bake in a 350 degree oven for 50 minutes.

Easy Chicken Crescents

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 2 (8 ounce) packages crescent roll dough
  • 1 (8 ounce) container cream cheese
  • 1 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon seasoning salt (optional)
  • 1 (12 1/2 ounce) can white meat chicken, drained
  • 1 1/2 cups seasoned bread crumbs
  • 1/2 cup butter, melted
  • 2 cups chicken gravy

Recipe

  • 1 preheat oven to 350°f.
  • 2 combine chicken, cream cheese, onion powder, garlic powder, seasoned salt; blend well.
  • 3 unroll and detach each crescent section.
  • 4 place two tablespoons of chicken mixture in the center of large end.
  • 5 roll down to tip.
  • 6 pinch all edges closed.
  • 7 roll each chicken crescent in melted butter then roll in fine bread crumbs.
  • 8 bake until lightly browned and bread is done.
  • 9 spoon hot gravy over each chicken crescent.

Easy Chicken Green Chili Quesadillas

  • 4 large flour tortillas
  • 2 cups shredded monterey jack pepper cheese
  • 4 cups pre cooked chicken breasts, chopped

Recipe

  • 1 place the tortillas on a large saute pan.
  • 2 add 1/2 cup cheese, 1 cup chicken, 1 tbsp green chili and 1/2 tbsp cilantro to each tortilla.
  • 3 cook over med heat until the cheese is melted, fold the tortilla over, remove from the heat and cut into quarters.
  • 4 serve.

Easy Chicken Fricassee

  • Servings: 6
  • 1/3 cup flour
  • 1/4 teaspoon salt
  • 1 teaspoon oregano
  • 3 lbs chicken parts (skinless)
  • 1/4 cup butter
  • 1 (10 1/2 ounce) can cream of mushroom soup
  • 1 (10 1/2 ounce) can water or 1 (10 1/2 ounce) can milk
  • 10 ounces cooked noodles

Recipe

  • 1 combine flour, salt and oregano in a paper bag.
  • 2 add chicken, a few pieces at a time, and shake until well coated.
  • 3 brown chicken in butter.; transfer chicken to a 9 x 13 inch baking dish.
  • 4 blend any remaining flour mixture into drippings; stir in soup, then water.
  • 5 heat, stirring until smooth; pour sauce over chicken.
  • 6 bake, uncovered, at 350 degrees about 1 hour or until chicken is tender;. baste with sauce once or twice.

  • 2 -3 cups chicken, cooked and diced
  • 2 packages broccoli stems, cooked & drained or 1 bunch fresh broccoli, cooked al dente (fresh broccoli preferred)

Recipe

  • 1 arrange chicken in greased, or spray buttered 13x9 pan.

  • 3 stir together milk and soup, add more milk if you desire it more saucey.
  • 4 pour over cheese.
  • 5 bake uncovered 25-30 minutes at 350 degrees or until bubbling.

Ingredients

  • 28 ounces chicken broth
  • 1/2 teaspoon poultry seasoning
  • 1 tablespoon chicken bouillon powder (optional)
  • 2/3 cup bisquick baking mix

Recipe

  • 1 in blender, combine broth, poultry seasoning, bouillon powder and bisquick.
  • 2 blend at high speed, about 1/2 minute or until smooth.
  • 3 pour into saucepan and stir constantly over medium high heat, until it comes to a boil and is smooth and thickened.

  • 1 put soup in large pot.
  • 2 mix flour with 3 tablespoons of the milk.

  • 4 small boneless skinless chicken breasts

  • 1 tablespoon dijon mustard
  • 1 cup shredded swiss cheese

Recipe

  • 1 preheat oven to 400 degrees. prepare stuffing mix as directed on the package; set aside.
  • 2 place chicken in 13" x 9" baking dish; cover with ham. mix soup and mustard; spoon over chicken. top with stuffing.
  • 3 bake 25 minute or until chicken is cooked through. sprinkle with cheese. bake an additional 5 minute or until cheese is melted.

  • 1 -cook onion in large saute pan on medium until carmelized.
  • 2 -add garlic and cook 2 minutes or until garlic is just browning.
  • 3 -add ground chicken and curry powder and cook until chicken is thoroughly cooked.
  • 4 -add can of tomatoes and cook until most of liquid has evaporated.
  • 5 -add yogurt or sour cream and cook until well incorporated and whole dish is of creamy consistency.
  • 6 -serve with the cooked rice.

Easy Chicken Enchilada

Ingredients

  • Servings: 4
  • 2 cans white chunky chicken
  • 1 package flour tortilla
  • 1 -2 package shredded cheese
  • 1 jar salsa
  • 1 container sour cream
  • chili powder

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 drain water from cans of chicken.
  • 3 use a medium to large rectangular casserole dish.
  • 4 microwave 3 tortillas at a time inside 2 paper towels for 15 seconds.
  • 5 spoon small amount of chicken, cheese, salsa, sour cream, and chili powder on each tortilla.
  • 6 roll tortilla as tightly as possible without breaking.
  • 7 place in dish tightly next to each other.
  • 8 repeat the process using all tortillas in package.
  • 9 top tortillas with cheese, salsa, chili powder, and bake for 20 to 25 minutes.
  • 10 cover with remaining sour cream and serve.

Easy Chicken Cracker Spread/dip

Ingredients

  • mayonnaise
  • canned white chicken meat (large can)
  • mrs. dash seasoning mix
  • wheat thins crackers or saltine

Recipe

  • 1 mix canned chicken and mayo like you are making tuna sandwiches, but add a little bit more mayo.
  • 2 if you add too much and it is runny, add more chicken.
  • 3 then add mrs.
  • 4 dash to taste.
  • 5 refrigerate until cold.
  • 6 then dip in your cracker and eat!
  • 7 (i like wheat thins the best.).

Ingredients

  • 1 (6 ounce) can tomato paste
  • 6 fluid ounces warm water (110 degrees f/45 degrees c)
  • 3 tablespoons grated parmesan cheese
  • 1 teaspoon minced garlic
  • 2 tablespoons honey
  • 1 teaspoon anchovy paste (optional)
  • 3/4 teaspoon onion powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried marjoram
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon ground black pepper
  • 1/8 teaspoon cayenne pepper
  • 1/8 teaspoon dried red pepper flakes
  • salt to taste

  • in a small bowl, combine tomato paste, water, parmesan cheese, garlic, honey, anchovy paste, onion powder, oregano, marjoram, basil, ground black pepper, cayenne pepper, red pepper flakes and salt; mix together, breaking up any clumps of cheese.
  • sauce should sit for 30 minutes to blend flavors; spread over pizza dough and prepare pizza as desired.

Easy Chicken Eggplant (aubergine) Parmesan

Ingredients

  • Servings: 6
  • 1 lb boneless skinless chicken breast (thin sliced)
  • 1 medium eggplant (approximately 1 pound)
  • 1/3 cup italian breadcrumbs
  • 3/4 lb mozzarella cheese, sliced thin
  • 1 (26 ounce) jar marinara sauce (approximately 3 cups)
  • 1/4 lb parmesan cheese, grated

Recipe

  • 1 preheat oven to 350 degrees fahrenheit.
  • 2 peel and slice eggplant.
  • 3 lay between two layers of paper towels for 15-20 minutes to drain moisture from eggplant, then discard paper towels.
  • 4 line bottom of 13x9 inch baking dish with the chicken breast slices.
  • 5 cover chicken with the eggplant slices.
  • 6 sprinkle breadcrumbs over eggplant.
  • 7 cover breadcrumbs with mozzarella cheese slices (or grated if you prefer).
  • 8 pour marinara sauce over cheese.
  • 9 sprinkle parmesan cheese over top.
  • 10 bake for 30-40 minutes at 350 degrees.

Easy Chicken Enchiladas

Ingredients

  • Servings: 4
  • 4 chicken breasts
  • 10 -12 flour tortillas, 10-inch (you can use any flavour)
  • 1 (10 ounce) can fiesta tomato soup (i have used the plain one)
  • 1 (10 ounce) can cheese soup
  • 1 (10 ounce) can cream of chicken soup (i use low fat)
  • 1 cup salsa, sauce (i use a thick and chunky one)
  • 1 cup sour cream (i use low fat)
  • 1 bunch green onion, chopped
  • cilantro, chopped (i don't use it because we don't like it)
  • 3 cups monterey jack cheese, grated
  • 1 teaspoon cumin
  • 1 tablespoon chili powder
  • 1/2 teaspoon turmeric
  • salt & pepper
  • 1 dash hot sauce, to taste
  • 3 dashes worcestershire sauce
  • 1 1/2 tablespoons oil

Recipe

  • 1 cut chicken into small pieces ( maybe1/2 "), put in bowl and sprinkle with cumin, chili, tumeric ,salt, pepper, worcestershire, hot sauce.
  • 2 mix up to coat chicken.
  • 3 add oil.
  • 4 mix to coat chicken.
  • 5 let sit 30 minute.
  • 6 meanwhile mix tomato soup with salsa in a small bowl, mix sour cream with cheese soup in another bowl.
  • 7 chop onions & cilantro - set aside.
  • 8 grate cheese.
  • 9 brown the chicken in a non stick pan.

  • 2 set crockpot to low and allow to simmer several hours. if the chicken is not already cooked (i used leftovers), then allow to cook all day to ensure chicken is tender enough to shred.

  • 4 put shredded chicken back into pot, add 1/2 cup enchilada sauce, 1 cup shredded cheese, 1/2 cup sour cream. mix well.

  • 7 take a tortilla and put a couple spoonfuls of chicken mixture it; roll up and place seam side down into sauced casserole dish.

  • 1 add a 1/2 teaspoon chilli powder and turmeric to the chicken pieces.
  • 2 mix well and let it marinate for atleast 1/2 hour.
  • 3 heat a heat and add oil.
  • 4 when the oil is hot, add the ginger and onion.
  • 5 fry in medium heat until the onions are brown and soft.
  • 6 add chopped tomatoes and continue frying until oil begins to leave.

  • 10 add a little water and the yogurt and mix well. let it cook for a few more minutes until the gravy becomes a bit thick. ( the yogurt added makes a very rich gravy).
  • 11 switch off the stove. sprinkle with the chopped cliantro leaves.

  • 1 garlic clove, minced
  • 1 1/2 cups half-and-half cream
  • 1/2 cup shredded parmesan cheese
  • 1 teaspoon paprika

  • 1 cook fettuccine in boiling water for 12 minutes.
  • 2 meanwhile, in a large skillet, cook the bacon until crisp. remove to paper towels to drain, reserving 1-2 tablespoons drippings.
