Dill Casserole Bread

Total Time: 40 mins Preparation Time: 5 mins Cook Time: 35 mins

Ingredients

  • Servings: 8
  • 1 cup milk
  • 2 tablespoons butter, melted
  • 1 egg
  • 2 1/4 cups bisquick
  • 3 tablespoons onions, finely chopped
  • 1 1/4 teaspoons dill weed

Recipe

  • 1 heat oven to 375°f.
  • 2 grease 1 qt round casserole dish.
  • 3 beat milk, butter and egg in med bowl until smooth.
  • 4 stir in remaining ingredients just until bisquick is moistened, bater will be lumpy.
  • 5 spread batter into dish.
  • 6 bake 35 mins or until a toothpick inserted in the center comes out clean.
  • 7 cool 5 mins before removing from pan.

Dill Pesto

Total Time: 15 mins Preparation Time: 15 mins

Ingredients

  • 1 1/2 cups packed fresh dill leaves
  • 1/2 cup packed fresh flat-leaf parsley (italian)
  • 2 tablespoons walnuts or 2 tablespoons pistachios or 2 tablespoons pine nuts
  • 2 cloves garlic, smashed
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons freshly grated parmesan cheese

Recipe

  • 1 in a blender or food processor, place the dill, parsley, nuts, and garlic.
  • 2 whirl until finely minced.
  • 3 add the oil and cheese, and process until blended.
  • 4 transfer to a small bowl, cover and chill.

Dill Salad Dressing

  • 1/2 lemon juice, and rind of grated

Dill Potato Salad

Ingredients

  • 3 lbs potatoes
  • 16 ounces frozen peas
  • 1/4 cup chopped onion
  • 2 garlic cloves, minced
  • 1 cup plain fat-free yogurt
  • 1/3 cup light mayonnaise
  • 1/2 teaspoon granulated sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon celery salt
  • 2 teaspoons dried dill weed
  • 2 tablespoons lemon juice

Recipe

  • 1 boil potatoes in water to cover until tender. let cool. peel and slice thin.
  • 2 rinse frozen peas with hot water; drain well. add peas to sliced potatoes. add onion and garlic.
  • 3 in a small bowl, combine yogurt, mayonnaise, sugar, salt, pepper, celery salt, dill weed and lemon juice; mix well. pour over potato mixture; mix well. refrigerate, covered, 4 hours to let flavors blend before serving.

  • 1 (10 ounce) jar dill relish
  • 1 small onion, diced
  • 1/2 cup red onion, diced
  • 3 roma tomatoes, seeded and diced
  • 1/4 cup finely chopped cilantro
  • 1 serrano chili, diced
  • 1 tablespoon extra virgin olive oil
  • salt and pepper

Recipe

  • 1 pour jar of dill relish in bowl.
  • 2 dice onions, tomatoes, cilantro and serrano chili (with or without seeds, depending on your taste)
  • 3 toss in a bowl, drizzle olive oil over top. add salt and pepper to taste and mix.
  • 4 serve over hotdogs or hamburgers. enjoy!

Dill Pickles By The Jar

Ingredients

  • 1 quart cucumber, small
  • 1/3 cup brown apple vinegar
  • 1 tablespoon pickling salt
  • 1 garlic clove
  • 1 bunch fresh dill weed
  • 2 grape leaves (fresh or canned)

Recipe

  • 1 pack cucumbers in quart jars.
  • 2 fill jar with 1/3 cup vinegar and the rest of the jar with water.
  • 3 pour the mixture off and bring to a boil.
  • 4 while hearing, add to jars, 1 tbsp pickling salt, 1 clove of garlic and a good amount of dill and grape leaves.
  • 5 pour boiling water over the pickles.
  • 6 seal jars and place in water bath for 15 minutes.

Dill Sauce

Ingredients

  • 1 1/2 cups mayonnaise
  • 1/2 teaspoon ground dill or 1/2 teaspoon dill seed
  • 3 tablespoons lemon juice

Recipe

  • 1 mix mayonnaise, dill and lemon juice well.
  • 2 refrigerate at least one hour for blending of flavors.
  • 3 serve on fish.

  • 2 tablespoons all-purpose flour
  • 1/8 teaspoon salt
  • 3/4 cup sugar
  • 1 egg, beaten
  • 1 cup sour cream
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon ground nutmeg
  • 2 cups apples - peeled, cored and chopped
  • 1/3 cup sugar
  • 1/3 cup all-purpose flour
  • 1/4 cup butter
  • 1 recipe pastry for a 9 inch single crust pie

  • preheat oven to 400 degrees f (205 degrees c).
  • combine apples, 2 tablespoons flour, nutmeg, and salt. mix together egg, sour cream, 3/4 cup sugar, and vanilla; blend into the apple mixture. pour filling into unbaked pie shell.
  • cream together 1/3 cup sugar, 1/3 cup flour, and 1/4 cup butter or margarine. set topping aside.
  • bake for 15 minutes. reduce temperature to 300 degrees f (150 degrees c), and continue baking for 30 minutes. remove pie from oven, and sprinkle with topping. increase temperature to 400 degrees f (205 degrees c), and bake pie for 10 more minutes. cool.

Dill Cream Dressing

Ingredients

  • 1 cup basic mayonnaise recipe
  • 1/2 cup sour cream or 1/2 cup plain yogurt
  • 2 teaspoons dijon mustard
  • 1 tablespoon dill, finely chopped, fresh

Recipe

  • 1 i concocted this recipe while trying to duplicate a potato salad served at a local restaurant. (see recipe for new potato salad).
  • 2 beat together all ingredients and season well with salt and pepper.
  • 3 more mustard and some lemon juice can be added to suit individual taste.
  • 4 milk or cream can be added for a thinner dressing.
  • 5 chill an hour or more before serving.

  • 1 tablespoon fresh dill
  • 1 teaspoon lemon pepper
  • 1 teaspoon lemon zest

Recipe

  • 1 combine sour cream, lemon pepper, dill and lemon zest in small bowl. spoon ¼ of mixture in bottom of slow cooker.
  • 2 arrange chicken in slow cooker. pour remaining sauce over chicken. cover and cook on low 3-4 hours.

Dill Buttered Carrots

Ingredients

  • 1 lb baby carrots (or regular carrots, peeled and sliced on the diagonal about a half inch thick.)
  • 1 cup chicken broth
  • 3 tablespoons butter
  • 1/2 teaspoon dried dill seed
  • 1/2 teaspoon dried parsley (optional)
  • 1 teaspoon lemon juice (optional)

Recipe

  • 1 place carrots and chicken broth in a saute pan, cover with lid and simmer until crisp-tender, about 10 minutes, depending on the size of the carrots. add additional broth or water as needed to reach desired tenderness. liquid should be gone by the time carrots are tender.
  • 2 add remaining ingredients and saute, stirring frequently, until the liquid is reduced to a buttery sauce, about 3 minutes. do not let the butter scorch. serve immediately.
  • 3 note: don't skip the chicken broth. using regular water to steam the carrots does not impart the same flavor and saltiness of the broth. you may use water with chicken bouillon or chicken soup base, both work equally well.

Dill Ranch Snack Crackers

Ingredients

  • 2 (10 ounce) bags oyster crackers
  • 3/4 cup canola oil
  • 1 tablespoon dill (heaping)
  • 1 package ranch dressing mix (this = 3 tb. bulk ranch dress. mix)

Recipe

  • 1 dump crackers into big bowl.
  • 2 in small bowl, stir together the oil, dressing mix, and dill, mixing well.
  • 3 pour over crackers, and stir until very well blended.
  • 4 over an hours time periodically stir the crackers.
  • 5 pour into a gallon ziploc bag.
  • 6 enjoy!

Dill Sauce

Dill Braised Brussels Sprouts

Total Time: 15 mins Preparation Time: 10 mins Cook Time: 5 mins

Ingredients

  • Servings: 4
  • 1 lb brussels sprout
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon fresh ground pepper
  • 3 tablespoons chopped fresh dill
  • 1/3 cup water
  • 2 tablespoons fresh lemon juice
  • 1 -2 teaspoon butter
  • 3 tablespoons grated parmesan cheese

Recipe

  • 1 trim out leaves if necessary, then slice off ends of brussels sprouts.
  • 2 cut into 3 or 4 slices or if small, cut in half.
  • 3 heat oil in a skillet, add sprouts and stir fry until coated with oil and bright green.
  • 4 add slat, pepper, dill, water and lemon juice; cover and cook 2 minutes or until tender but still crunchy.
  • 5 toss with butter and parmesan cheese.

Dill Pickle-layered Meatloaf

Ingredients

  • Servings: 8
  • 4 slices rye bread
  • 2 eggs, beaten
  • 1 cup milk
  • 1 (4 ounce) can chopped mushrooms, drained
  • 1 small onion, finely chopped
  • 1 tablespoon prepared horseradish
  • 1 teaspoon thyme leaves
  • 1 teaspoon caraway seed
  • 1 1/2 teaspoons celery salt
  • 1 1/2 teaspoons dijon mustard
  • 1/4 teaspoon pepper
  • 2 lbs lean ground beef
  • 2 -3 medium dill pickles

Recipe

  • 1 tear the bread into bite-size pieces.
  • 2 in a large bowl, combine bread, eggs, and milk: let stand 10 minutes or until bread becomes soggy.
  • 3 add the mushrooms, onion, horseradish, thyme, caraway seed, celery salt, mustard, pepper, and beef.
  • 4 mix with a wooden spoon or with your hands until well blended.
  • 5 pat 1/2 of the meat mixture into a 5x9 inch loaf pan.
  • 6 slice pickles lengthwise and arrange on the meat.
  • 7 add the remaining meat mixture and pat firmly into a smooth layer.
  • 8 bake in a 350 degree oven for 1 hour and 15 minutes.
  • 9 cool in the pan for 20 minutes, then invert on a platter; cover and chill.

  • 1 combine ingredients, chill at least 8 hours, 10 is better.

  • 3 -4 boneless skinless chicken breasts, cubed
  • 1 large chicken bouillon cube (or 2 small)

  • 1 lb sour cream
  • rice

Recipe

  • 1 in a small saucepan over medium heat, dissolve bullion in 2c water then add dill and gravy mix, wisk thoroughly and set aside.
  • 2 in large frying pan, brown cubed chicken breasts.
  • 3 add gravy mix into frying pan.
  • 4 add sour cream and bring the mix almost to a boil.
  • 5 serve over rice. cooking time does not include cooking rice.

Dill Pickle Popcorn

Ingredients

  • 2 tablespoons kernels pickling spices (or to taste)
  • 1 orville redenbacher natural flavor microwave popcorn (this is the best popcorn to have around the house to eat plain or to add too)
  • 2 tablespoons melted butter

  • 2 dump in large bowl.
  • 3 melt butter.
  • 4 drizzle.
  • 5 shake on spice.
  • 6 mix.

Dill Chicken Salad

  • 4 chicken breasts, precooked and diced
  • 1 onion, diced
  • 6 celery ribs, diced

  • 1 cup mayonnaise

Recipe

  • 1 place chicken, onion, and celery in a large bowl and toss to combine.
  • 2 in a smaller bowl mix mayonnaise and dill.
  • 3 stir mayonnaise mixture into chicken and add salt and pepper to taste.
  • 4 serve on bread or with crackers.
  • 5 * you can add more or less mayo to your liking.
  • 6 ** we like alot of dill flavor so we use fresh dill. you can also adjust this amount to your liking.

carrot casserole

Ingredients

  • 2 1/2 cups sliced carrots
  • 1 tablespoon butter
  • 3 eggs
  • 1 cup sugar
  • 1/3 cup milk
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract

Recipe

    Preparation Time: 20 mins Cook Time: 30 mins Ready Time: 50 mins

  • preheat oven to 325 degrees f (165 degrees c). grease a 1 quart casserole dish.
  • place carrots and enough water to cover them in a small saucepan. bring to a boil, and cook until carrots are very tender. drain. using a blender or food processor, puree carrots to a smooth consistency.
  • in a medium bowl, mix together the carrots and butter. beat in the eggs, sugar, milk, salt, cinnamon, nutmeg, and vanilla. spread mixture into the prepared casserole dish.
  • bake for 25 to 30 minutes in the preheated oven, or until set.

Dill Bread

Ingredients

  • 1 package active dry yeast
  • 2 teaspoons granulated sugar
  • 1/4 cup water (100 to 115 degrees f.)
  • 8 ounces large-curd cottage cheese, room temperature (not creamed type)
  • 1 egg, room temperature
  • 2 teaspoons onions, grated
  • 2 tablespoons butter, melted
  • 2 teaspoons salt
  • 1/4 teaspoon baking soda
  • 1 cup whole wheat flour
  • 1 1/2 cups all-purpose flour
  • 2 teaspoons dill weed

Recipe

  • 1 dissolve the yeast and sugar in the warm water in a large mixing bowl, and allow to proof for about 5 minutes.
  • 2 stir the cottage cheese into the yeast mixture, then add the egg and blend thoroughly.
  • 3 stir in the grated onion, melted butter, salt, and baking soda.
  • 4 stir in the flours, 1 cup at a time, and the dill weed.
  • 5 turn out a lightly floured board.
  • 6 knead for about 5 minutes, or until the dough is smooth and springs back when indented with the fingers.
  • 7 butter a 9x5x3-inch loaf pan and shape the dough to fit the pan.
  • 8 cover and let rise in a warm, draft-free spot until doubled in bulk.

Dill N Salmon Pasta Salad

Ingredients

  • Servings: 6
  • 7 ounces uncooked pasta (corkscrew or twisted)
  • 8 ounces salmon fillets, cooked, chunked
  • 2 cups cheddar cheese, cubed 1/2-inch
  • 1/3 cup red pepper, cubed 1/2-inch
  • 2 tablespoons green onions, sliced
  • 1/3 cup vegetable oil
  • 1/4 cup lemon juice
  • 1 teaspoon dill weed
  • 1/2 teaspoon garlic salt

  • 1 cook pasta accoding to package directions, drain and rinse with cold water.

  • 1/2 teaspoon italian parsley, leaves only
  • 2 onions, thinly sliced
  • 2 carrots, thinly sliced

  • 2 cups clear malt vinegar

  • 1 slice the salmon fillet into 2in thick slices. sprinkle with the salt, sugar and lemon juice.

  • preheat oven to 300 degrees f (150 degrees c). butter a large baking sheet.
  • in a large glass or metal mixing bowl, beat egg whites until foamy. blend in vinegar and vanilla. gradually add sugar, continuing to beat until stiff peaks form. with a large spoon, drop meringue in 8 clumps (about 4 inches diameter), close together on baking sheet. indent the center of each clump with the back of a spoon.
  • bake in preheated oven for 1 1/2 hours. turn off oven, and let shells cool in the oven, about 1 hour.
  • to serve: fill each shell with a scoop of vanilla ice cream, and smother with thawed strawberries.

Dill Pickle Roast

Ingredients

  • 1 (4 -5 lb) rump roast (or other roasting meat, we actually put two roasts in one roaster)
  • 1 tablespoon oil for browning sauce
  • 2 stalks celery (optional)
  • 2 tablespoons flour
  • 4 -6 carrots, peeled and left whole (ends cut off on each side)
  • 4 -6 potatoes, peeled and cut in half lengthways
  • 2 small onions, peeled and cut in half
  • 2 (24 ounce) jars dill pickle spears, juice reserved. do not strain liquid
  • salt and pepper, to taste

Recipe

  • 1 salt and pepper all sides of roast and brown in a pan on the cooktop. for some reason when i try to submit this recipe it says "oil for browning sauce", even though i don't have that written anywhere. "brown the roast in the oil" is how it should read. (approx 5 min each side). a nice crust should form, but do not burn.
  • 2 while meat is browning, peel carrots and potatoes.
  • 3 if using cooking bag, sprinkle flour in bottom of the bag (do this also if using a plain roasting pan).
  • 4 place celery down on the bottom of the pan, and set the browned roast on top of the celery stalks.
  • 5 surround the roast with onions, carrots, potatoes, and pickle spears. we usually use about 1.5 jars of the pickle spears. you may need to cut the carrots in half to help them fit around the roast easier.
  • 6 pour pickle juice and around the roast. important: do not let juice go more than half way up the side of the meat, otherwise you will be boiling your dinner instead of roasting it.
  • 7 if the pickle juice isn't enough to reach the meat, add water.
  • 8 **if liquid accumulates higher than half way up the roast while cooking, remove liquid with a baster and reserve for dipping or pouring over meat and veggies on the plate before serving.
  • 9 seal the cooking bag and slice a couple vents in the top of the bag, or if using a roasting pan use the lid.
  • 10 roast at 350 degrees for 2 to 3 hours, depending on the amount of veggies you use and the size of the roast.
  • 11 the meat should just about start to shred away from the roast when you test it with a fork.
  • 12 you may need to remove the roasted veggies earlier than the meat, test with a fork and remove when done. keep warm or reheat just before serving. discard the onions, we don't eat those.
  • 13 baste the meat while roasting if using the roasting pan.
  • 14 slice the meat thin for serving, pour some of the au jus over the meat and veggies just before serving.
  • 15 we always do a second roast in the same roaster because this makes amazing sandwiches the next day. for the sandwich roast, slice meat when fresh out of the oven and store it in the remaining au jus to keep it moist. reheat meat in some au jus, place a slice of muenster cheese and a pickle on a crusty roll or sub bun and microwave just long enough to melt the cheese. add the warmed meat and serve with some dipping juice. it's wonderful!

Dill Pickle Bread (abm)

  • 1 cup pickle juice (can substitute 1/2 cup dill pickle juice and 1/2 cup warm water 110 degrees f.)
  • 1 large dill pickle, finely chopped
  • 1 tablespoon olive oil
  • 1 tablespoon dried dill weed
  • 1 tablespoon granulated sugar
  • 1/4 teaspoon salt
  • 3 cups bread flour or 3 cups unbleached all-purpose flour
  • 3 teaspoons instant dry yeast

Recipe

  • 1 place all ingredients in the pan of the bread machine in the order suggested by the manufacturer. select dough setting and press start. note: depending on how big your pickle is and how much juice is in the pickle, you might need to add additional flour. check the dough (don't be afraid to open the lid). it should form a nice elastic ball. if you think the dough is too moist, add additional flour (a tablespoon at a time). the same is true if the dough is looking dry and gnarly. add warm water (a tablespoon at a time).
  • 2 when dough cycle has finished, remove dough from pan and turn out a lightly oiled surface. form dough into an oval, cover and let rest for 10 minutes.
  • 3 after resting, flip dough bottom side up and press to flatten. fold dough into an envelope by folding the top 1/3 of the way to the bottom. then fold the bottom a 1/3 of the way over the top. then press dough with the palm of your hand to make an indentation down the center of the dough and fold the top completely to the bottom, sealing the seam with the palm of your hand.
  • 4 place on a baking pan dusted with cornmeal or covered with a silpad; cover with a dishtowel and place in a warm spot to rise for approximately 20 minutes. preheat oven to 400 degrees f.
  • 5 after dough has risen, slash the bread with a very sharp knife making three 1/2-inch deep diagonal slashes. brush the top of the bread with cold water and bake for 20 to 25 minutes or until nicely browned, with an internal temperature of 200 and 210 degrees.

Dill And Garlic Shrimp Skewers

  • 18 large garlic cloves, unpeeled
  • 1 tablespoon dill seed
  • 2 tablespoons minced fresh dill
  • 2 tablespoons fresh lemon juice
  • 1/2 teaspoon hot red pepper flakes
  • 2/3 cup vegetable oil
  • eighteen 8-inch wooden skewer, soaked in warm water for 1 hour
  • 18 large shrimp, shelled

Recipe

  • 1 in a saucepan of boiling water boil the garlic for 15 to 20 minutes, or until it is tender but not soft, drain it, and discard the peel carefully, leaving the cloves whole.
  • 2 in a bowl whisk together the dill seeds, the fresh dill, the lemon juice, and the red pepper flakes, add the oil in a stream, whisking, and whisk the marinade until it is emulsified.
  • 3 the end of each skewer thread a shrimp and 1 garlic clove.
  • 4 arrange the skewers, shrimp end down, in a bowl just large enough to hold them. pour the marinade over the shrimp, and let the shrimp marinate, cover loosely and chilled, basting them occasionally, for 3 hours.

  • 1 1/4 lbs skinned salmon fillets
  • 1 egg
  • 1/2 cup mayonnaise
  • 1/2 cup dijon mustard
  • 1/2 cup plain breadcrumbs

  • 2 teaspoons lemon juice (fresh is best)

Recipe

  • 1 rinse the salmon and pat dry with paper towels. cut in 1-inch pieces and place on a sheet of plastic wrap. put in the freezer for 20-30 minutes, until firm but not frozen solid.
  • 2 line a rimmed baking sheet with foil and spray with cooking spray.
  • 3 in a large bowl whisk the egg, 2 tablespoons of the mayonnaise, and 2 tablespoons of the mustard. add the breadcrumbs and 3 tablespoons of the dill and mix well.
  • 4 chop the semi-frozen salmon in a food processor, pulsing until chopped but not pureed. add the salmon to the bowl, add salt and pepper to taste, and mix well.
  • 5 make mixture into 1 1/2-inch balls and place on the prepared pan. spray the tops of the balls with cooking spray.
  • 6 bake at 425 degrees for 12-15 minutes. while the salmon balls are baking, mix the remaining mayonnaise, mustard, and dill with the sour cream and lemon juice in a bowl and whisk well.
  • 7 serve the salmon balls with the dipping sauce.

  • 2 liters boiling salt water
  • 1 lb red potatoes
  • 6 fluid ounces mayonnaise
  • 3 tablespoons water
  • 1 tablespoon lemon juice
  • 2 teaspoons minced garlic, in oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 3 fluid ounces fresh dill, chopped

Recipe

  • 1 wash and cut the potatoes into 1" cubes.

  • preheat oven to 300 degrees f (150 degrees c).
  • spread chopped hazelnuts in a single layer on a baking sheet. bake in the preheated oven for 5 to 10 minutes, stirring once or twice, and watching very carefully as they will burn very easily. remove from the oven when browned and fragrant.
  • cut baby carrots in half cross-wise. in a saucepan over medium heat, bring water, carrots, salt, and 1 tablespoon of butter. bring to a boil, and reduce heat to low. cover, and simmer very lightly for 10 to 15 minutes, or until tender but firm. drain and set aside.

  • to make crust: in a medium bowl, combine the 2 1/2 cups flour and 1 teaspoon salt. cut in shortening until coarse crumbs form. stir in water, vinegar and 1 egg. form dough into ball and roll out into 2 1/8 inch thick rounds. use one to cover the bottom and sides of a ten-inch pie pan.
  • to make filling: in a large bowl, beat remaining eggs until thick and light. combine flour, sugar, salt, and nutmeg. fold into the eggs. stir in butter and orange juice until the mixture is smooth. fold in rhubarb. pour into pie shell; cover top of pie with remaining pie shell. crimp edges together and cut slits in top shell.

tante's apple pie

  • 15 ounces kidney beans, drained and rinsed
  • 15 ounces chili beans

  • 2 cups water
  • 1/2 cup frozen corn
  • 3 teaspoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 tablespoon brown sugar
  • 2 garlic cloves, minced
  • 1 teaspoon vinegar
  • 1 onion, chopped
  • 5 fresh jalapeno peppers, seeded and chopped

Recipe

  • 1 mix the ground beef and chorizo loosely and brown. add the garlic and onion toward the end of the browning so as not to overcook. drain.
  • 2 in large dutch oven, mix the soup, paste, water, vinegar and spices. mix well.

  • 1 in a bowl sift the flour, powder and salt.

  • 15 lightly fold and roll, allowing room for rice to expand.
  • 16 place leftover or broken grape leaves in the bottom of large pot.
  • 17 tightly pack the dolmades into pot, using multiple layers if necessary.
  • 18 when all dolmades are in the pot, pour juice over top.
  • 19 cover with more grape leaves.
  • 20 place upside down plate on top to prevent dolmades from opening.
  • 21 bring to a boil, then simmer until tender (approximate 1 hour).
  • 22 when done, let sit for 10 minutes then genlty remove to platter.
  • 23 combine portion of juice with juice of 1 1/2 lemons.
  • 24 pour over dolmades.

  • 4 bell peppers
  • 1 lb lean ground beef
  • 2 cups chopped kale
  • 1/2 onion, chopped
  • 1 (16 ounce) can diced tomatoes

  • 1/2 teaspoon basil
  • 1 tablespoon worcestershire sauce
  • 1 (4 ounce) can tomato sauce

Recipe

  • 1 cut tops from peppers.
  • 2 rinse peppers and submerge in boiling water for 5 minutes. drain. sprinkle the inside with salt.
  • 3 chop reserved pepper tops and saute with the ground beef. add chopped onion and kale. cook until beef is well done.

Dolmades (stuffed Grape Leaves)

  • 1 lb lamb, coarsely ground
  • 1 teaspoon allspice
  • 2 garlic cloves, crushed
  • salt & freshly ground black pepper
  • 2 cups chicken broth
  • 1 lemon, juice of
  • 30 grape leaves
  • 1 cup yellow onion, chopped
  • 1 cup long grain rice
  • 1/2 cup olive oil
  • 1/4 cup fresh italian parsley, chopped
  • 1 tablespoon dried dill
  • 1 lemon, juice of
  • 2 tablespoons mint

Recipe

  • 1 mix all the ingredients for the filling (onions through salt & pepper). pick out the smallest leaves in the jar for lining the pot with.
  • 2 cut off the stems from the grape leaves. put a leaf on the counter, shiny side down. roll the filling into a ¾ inch ball, and place near the broad end of the leaf. fold over left and right segments, then roll the ball up in the leaf toward the tip. don't wrap too tightly, as the rice needs to expand. place the packet loose side down in a 2 quart heavy lidded kettle (lined with some of the smaller leaves). place the dolmades close to one another so they will not come undone while cooking. cover the first layer with another layer of small leaves, and continue to layer until all dolmades are used.
  • 3 place a heavy plate on top of the dolmades to act as a weight during cooking. mix the chicken stock and lemon juice for the broth, and add to leaves in pot. cover and bring to a simmer. cook for one hour, remove from heat and allow to cool for another hour. don't remove the lid, or the leaves will oxidize and darken.
