Hawaiian Ginger Beets

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 13 1/2 ounces pineapple tidbits
  • 1/3 cup vinegar
  • 1/3 cup water
  • 1/3 cup sugar
  • 4 teaspoons cornstarch
  • 3/4 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup onion, sliced
  • 2 tablespoons butter
  • 2 (14 ounce) cans small whole beets

Recipe

  • 1 drain syrup from pineabble and combine it with vinegar, water, sugar, cornstarch, ginger and salt.
  • 2 cook onion in butter in a saucepan until it is limp (about 3 minutes).
  • 3 add syrup mixture and cook, stirring constantly, until thickened and clear.
  • 4 add beets and remove from heat.
  • 5 just before serving, add pineapple and reheat.

Strawberry Ravioli (erdbeer-ravioli)

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 (16 ounce) package pillsbury grands refrigerated buttermilk biscuits (8 count)
  • 12 strawberries
  • 1 vanilla pod
  • 1 lemon, zest of
  • 1 pinch salt
  • 3 tablespoons sugar (according taste)
  • 24 tablespoons honey (or maple syrup)
  • fresh mint (to garnish)
  • fresh strawberries (to garnish)

Recipe

  • 1 horizontally cut the biscuits so there are 3 layers from each of of the biscuit; carefully separate the layers (you will need 24 parts total).
  • 2 place one strawberry in between two dough layers.
  • 3 seal the outside edge of the biscuit to make the ravioli shape and make sure it is sealed tight.
  • 4 hollow out the vanilla pod (reserve "insides") and bring the empty pod in a pot of water to a boil.
  • 5 add the sugar, some salt and the zest into the water.
  • 6 let the ravioli simmer in this water for about 10-15 minutes at medium heat.
  • 7 drain the ravioli.
  • 8 heat a skillet and add 4–6 tablespoons of honey or maple syrup together with the reserved insides of the vanilla pod.
  • 9 add the ravioli and fry until yellow-golden or you can simply "glaze" the ravioli in the heated syrup mix.
  • 10 arrange on a plate and garnish with fresh strawberries and mint.

Raisin Cream Pie

Ingredients

  • 1 cup raisins
  • 1 cup water
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 4 tablespoons flour
  • 2 large eggs
  • 1/2 cup water
  • 2 tablespoons butter
  • 3 tablespoons lemon juice
  • 1 tablespoon vanilla
  • cool whip, thawed

Recipe

  • 1 bring to a boil raisins and water.
  • 2 beat sugars, flour, eggs and water together.
  • 3 cook until thick.
  • 4 remove from heat.
  • 5 add butter, lemon juice and vanilla.
  • 6 cool to room temperature.
  • 7 pour into baked pie shell and top with cool whip.

Savory Sesame Green Beans

Ingredients

  • Servings: 4
  • 1 lb fresh green beans, trimmed
  • 3/4 cup water
  • 1/2 teaspoon dried savory
  • 1 tablespoon butter
  • 1/2 teaspoon soy sauce
  • 1 teaspoon sesame seeds

Recipe

  • 1 place beans, water and savory in a saucepan.
  • 2 place pan on medium-high heat.
  • 3 bring water to a simmer and cook, uncovered, until liquid is almost gone, stirring occasionally.
  • 4 stir in butter and cook, stirring, just until butter is melted.
  • 5 stir in soy sauce and sesame seeds.

Marinated Onion Rings

  • 1 spanish onion (sliced thin)
  • 1 cup sugar (or less)
  • 1 cup vinegar
  • cold water, to cover
  • 1 cup cold water
  • 1 tablespoon oil

Recipe

  • 1 let onions stand in cold water 1 hour.
  • 2 combine remaining ingred.
  • 3 heat until sugar disolves and pour over onions.

Strawberry Rhapsody Jam

Ingredients

  • 3 cups crushed strawberries
  • 1 cup crushed raspberries
  • 1 cup unsweetened apple juice or 1 cup cranberry juice
  • bernardin no-sugar needed fruit pectin (1 package)
  • artificial sweetener (1 1/2 cups granulated sugar or 1 1/2 cups splenda sugar substitute) (optional)

Recipe

  • 1 preheat mason jars and snap lids.
  • 2 combine strawberries and raspberries and fruit pectin in a large deep stainless steel saucepan. whisk in fruit pectin.
  • 3 if using sweetener, measure splenda or sugar and set aside. stirring constantly, bring fruit mixture to a boil over high heat. if using, add sweetener or sugar, and return mixture to a boil, stirring frequently. boil 3 minutes. remove form heat. skim foam.
  • 4 ladle into hot jars.

Middle Eastern Style Spaghetti Squash

Ingredients

  • Servings: 6
  • 1 spaghetti squash, cooked by your favorite method and separated into strands (see how to cook spaghetti squash)
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 1/2 teaspoon ground cardamom
  • 3/4 teaspoon ground coriander
  • 1/8 teaspoon ground ginger
  • 1/8 teaspoon allspice
  • salt, to taste
  • pepper, to taste
  • 1/2 cup toasted slivered almonds
  • 1 orange, zest of

Recipe

  • 1 in a large skillet over medium heat, heat butter and oil then stir in spices, except salt and pepper.
  • 2 cook for about a minute.
  • 3 stir in squash and sauté until well coated, adding pepper and salt to taste.
  • 4 remove to serving dish.
  • 5 sprinkle with toasted almonds and orange zest just before serving.

Rich Vanilla Dessert Sauce

Ingredients

  • 5 egg yolks
  • 2 tablespoons powdered sugar
  • 3/4 cup heavy cream
  • 1 teaspoon vanilla extract

Recipe

  • 1 in a small saucepan beat egg yolks with powdered sugar.
  • 2 blend in heavy cream.
  • 3 over medium to low heat, heat for 5 minutes: do not allow to boil!
  • 4 remove from heat; stir in vanilla.
  • 5 chill.

Strawberry Pretzel Dessert

Ingredients

  • 2 cups crushed pretzels
  • 3/4 cup margarine
  • 1 1/2 cups granulated sugar
  • 8 ounces cream cheese (room temperature)
  • 8 ounces cool whip
  • 2 (3 ounce) boxes strawberry jell-o gelatin dessert
  • 2 cups boiling water
  • 1 pint frozen sweetened strawberries (thawed)

Recipe

  • 1 preheat oven to 350 degrees f.
  • 2 mix crushed pretzels, butter, and 1/2 c sugar. pat into 9"x13" baking dish. bake at 350 degrees for 8 minutes. beat cream cheese, 1 c sugar, and cool whip together and spread on top of pretzel crust. dissolve jello in 2 c boiling water. add strawberries; chill until slightly set. pour the jello mixture over the cream cheese mixture. chill until hard.

Hawaiian Baked Bananas

Ingredients

  • Servings: 4
  • 4 bananas
  • 1/2 cup brown sugar, firmly packed
  • 1/4 cup pineapple juice
  • 3 tablespoons sherry wine
  • 1/2 cup macadamia nuts, chopped
  • 2 tablespoons butter
  • 1 dash nutmeg

Recipe

  • 1 peel bananas and place in a small baking dish.
  • 2 mix together brown sugar, orange or pineapple juice and sherry. pour over bananas.
  • 3 saute the chopped nuts in butter until toasty and sprinkle over bananas.
  • 4 add dash of nutmeg to taste.
  • 5 bake at 350 degrees for 15 minutes or bananas are lightly glazed.
  • 6 serve bananas with a spoonful of sauce over each.

Strawberry Pie

Ingredients

  • 1 quart strawberry, hulled and washed
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 1/2 cups water
  • 1 baked pie shell
  • 1 -3 ounce jello strawberry gelatin
  • 1 (8 ounce) carton cool whip

Recipe

  • 1 bring water, sugar, and cornstarch to a boil and than cook on low heat for about 2 minutes or until thick and clear.
  • 2 remove from heat and add jello.
  • 3 stir until dissolved.
  • 4 pour while hot over berries in pie shell.
  • 5 let cool in fridge to sat for 3-4 hours.
  • 6 top with cool whip before serving.

Lenka's Famous Mashed Potatoes

  • 7 -10 potatoes
  • 1/2 pint milk or 1/2 cream
  • 1 dash nutmeg

  • 1 peel your potatoes.
  • 2 boil them until they are soft.
  • 3 put your milk (or cream) into a pot, warm over medium heat.
  • 4 gradually add your butter and nutmeg.
  • 5 put you boiled potatoes into you kitchen-aid mixer (or mash buy hand).
  • 6 gradually add your milk mixture.
  • 7 mash until fluffy.

Savory Pb Pumpkin Herb Multigrain Muffin

  • 3/4 cup pumpkin, steamed
  • 2 tablespoons peanut butter, smooth
  • 1/2 cup nonfat milk
  • 1 cup oats, quick

Strawberry Pie

  • 1 (9 inch) baked pie crusts
  • 6 cups fresh strawberries
  • 1 1/4 cups sugar
  • 3 tablespoons cornstarch
  • 1/2 cup water
  • 1 (3 ounce) package cream cheese

Recipe

  • 1 set baked pie shell aside.
  • 2 mash enough of the berries to make 1 cup full of mashed berries.
  • 3 mix dry sugar and dry cornstarch well.
  • 4 in a medium saucepan,mix sugar and cornstarch mixture with water and berries.
  • 5 cook on medium heat (stirring constantly) till mixture boils and gets thick.
  • 6 then boil for 1 minute stirring constantly.
  • 7 while this mixture is cooling, beat cream cheese till smooth and softened.
  • 8 spread the cream cheese in the bottom of the baked pie shell.
  • 9 put the remaining whole berries in the pie shell over cream cheese.
  • 10 pour the cooked berries over top and refrigerate till cold and set.

Lemony Sugar Snaps

  • 2 teaspoons olive oil
  • 3 shallots, thinly sliced
  • 1 clove garlic, smashed

Recipe

  • 1 remove strings from both sides of sugar snap peas.
  • 2 heat oil in large nonstick frypan over medium heat.
  • 3 add shallots and garlic and cook, stirring, until shallots are softened, about 3 minutes add sugar snaps, lemon zest, and salt to frypan and cook, stirring until peas are just ender, about 4 minutes.

  • 3 tablespoons cornstarch
  • 1 (10 ounce) bottle 7-up soda
  • 1 (3 ounce) box strawberry jell-o gelatin dessert
  • 1 quart strawberry, cleaned and sliced
  • 1 baked pie shell

Recipe

  • 1 in a saucepan, combine sugar, cornstarch, and 7-up; cook until thick.
  • 2 add strawberry jello; blend till smooth.
  • 3 cool.
  • 4 place slice strawberries into pie shell.
  • 5 pour jello mixture over strawberries.
  • 6 refrigerate.
  • 7 *i have used diet 7-up to reduce the sugar content of the pie though i've not tried sugar-free jello.

Savory Spinach Egg Recipe Using Canned Spinach

  • 1/4 cup egg substitute
  • 1 dash pepper
  • 1/8 teaspoon salt

  • 1 in bowl, whisk together egg substitute, milk, pepper and salt.
  • 2 stir in spinach (i think it should be diced)and mix well.
  • 3 spray pam on skillet.

New England Maple Muffins

Ingredients

  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 1/4 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1/4 cup pure maple syrup
  • 1 1/2 cups sour cream
  • 1 large egg
  • 1/2 cup pecans, coarsely chopped (about 2 oz.)

Recipe

  • 1 preheat oven to 400 degrees. grease 12 standard size muffin-pan cups or line with paper liners.
  • 2 mix together flour, baking soda, baking powder, and salt.
  • 3 beat butter at medium speed until light and fluffy. beat in maple syrup in a slow and steady stream. beat in sour cream and egg until blended.
  • 4 at low speed, beat flour mixture into butter mixture, 1/2 cup at a time, until dry ingredients are just moistened. do not overmix. stir in nuts. spoon batter into prepared pan, filling cups 2/3 full.
  • 5 bake muffins until tops are firm and golden, 15-20 minutes. transfer pan to wire rack to cool slightly. turn muffins out onto rack to cool completely.

Marinated Red Onions

  • 1/4 cup red wine vinegar
  • 1/4 cup sliced green onion
  • 2 garlic cloves, minced
  • 1 teaspoon sugar
  • 1 teaspoon sweet hungarian paprika
  • 1 teaspoon dry mustard
  • 1/2 teaspoon dried tarragon, crumbled
  • 1/2 teaspoon dried thyme, crumbled
  • 1/2 teaspoon dried oregano, crumbled

  • 1 mix first 11 ingredients in large nonaluminum bowl; whisk in oil in thin stream.

Jack Daniel's Cranberry Sauce

  • 4 cups fresh cranberries
  • 1 whole orange, quartered, unpeeled & seeds removed
  • 2 cups sugar
  • 1/4 cup jack daniel's tennessee whiskey

Recipe

  • 1 chop cranberries & orange in a food processor.
  • 2 add sugar & mix just enough to combine.
  • 3 place in a covered container & refridgerate overnight.
  • 4 add whiskey just before serving.
  • 5 makes 1 quart.

New England Butternut Squash

Ingredients

  • Servings: 5
  • 1 medium butternut squash
  • 1/4 cup butter, melted
  • 1/4 cup maple syrup
  • 3/4 cup ground cinnamon
  • 1/4 cup ground nutmeg

Recipe

  • 1 cut squash in half lengthwise; discard seeds. place cut side down in a microwave-safe dish; add 1/2"-inch of water. cover and microwave on high for 15-20 minutes or until very tender; drain.
  • 2 when cool enough to handle, scoop out pulp and mash. stir in the butter, syrup, cinnamon and nutmeg.

Frankye's Fruit Punch

Recipe

  • 1 mix all ingredients except gingerale.

Strawberry Pie Fast And Easy

Ingredients

  • Servings: 6
  • 4 cups fresh strawberries (cut large strawberries in 2 or 3 pieces and small into 2 pieces)
  • 3/4 cup sugar
  • 2 tablespoons cornstarch
  • 1 (6 ounce) package strawberry jell-o gelatin dessert
  • 1 1/2 cups water
  • 1 graham cracker crust (9 inch or deep dish)

Recipe

  • 1 bring the sugar, cornstarch, water to a boil and let thicken.
  • 2 add jell-0 and stir until well mixed.
  • 3 let mixture cool down a little about 5 minutes.
  • 4 pour strawberries in pie shell.
  • 5 pour mixture over strawberries and refrigerate till jello mixture is solid.

Granola

Total Time: 30 mins Preparation Time: 5 mins Cook Time: 25 mins

Ingredients

  • 8 cups old fashioned oats
  • 1 cup brown sugar
  • 1/4 cup ground flax seed
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1/2 cup corn syrup
  • 1/2 cup vegetable oil
  • 1 teaspoon vanilla extract

Recipe

  • 1 preheat oven to 325.
  • 2 in a large bowl, mix oats, brown sugar, ground flaxseed, cinnamon and salt.
  • 3 in a small bowl, mix corn syrup, oil and vanilla extract.
  • 4 pour oil mix into oat mix, make sure oats are evenly coated.
  • 5 divide mixture evenly between two jelly roll pans.
  • 6 bake for 20-25 minutes. the mixture will seem a little moist, but it will harden up as it cools.
  • 7 let cool for 1/2 hour, break apart and store in an airtight container up to 1 week.

Super Simple & Fast Emerald (french) Green Lentils

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 1 cup green lentil
  • 1/2 teaspoon marjoram
  • 1 tablespoon fresh flat-leaf parsley (or 1/2 tsp dry)
  • 1 teaspoon olive oil (approx)
  • salt and pepper, to taste

Recipe

  • 1 boil 2 cups of water in a saucepan. add the lentils and marjoram. if using dried parsley, add now too. lower the heat.
  • 2 cover loosely and let cook for 20-30 minutes or until tender.
  • 3 remove any excess water if the lentils didn't absorb all of it, then put them into a serving bowl. if using fresh parsley, add now and mix well.
  • 4 drizzle a little olive oil evenly into the bowl (about 1 teaspoon or so, maybe a little less) and mix well.
  • 5 serve, salt and pepper to taste, and enjoy.

Savory Potato Doughnuts

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 4 slices bacon, cubbed
  • 4 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1 cup simply potatoes traditional mashed potatoes (prepared without butter or milk, just use water)
  • 3 tablespoons shortening
  • 1 cup sugar
  • 2 eggs, well beaten
  • 1 cup milk
  • 4 ounces goat cheese

Recipe

  • 1 brown off bacon.
  • 2 prepare mashed potatoes. instead of adding in milk or butter add 4 oz of goat cheese.
  • 3 combine all ingredients (a food processor may be used).
  • 4 roll out on a lightly floured surface. adjust dough consistency, if needed, adding flour if dough is too sticky or a little milk if too crumbly, until a soft, rollable dough is obtained. add as little flour as is possible to avoid having heavy, tough, doughnuts.
  • 5 cut out doughnut shapes using a doughnut cutter, two biscuit cutters or two glasses (a shot glass is a good size for cutting out the doughnut holes). dip the cutters in flour before each cut.
  • 6 use a spatula sprayed with non-stick spray to transfer the doughnuts to hot oil (about 370°f). turn once until browned on both sides and cooked through. if outside of doughnut browns before inside is cooked, reduce temperature.
  • 7 remove from oil using a slotted spoon and drain on paper towels. shake in a brown paper bag filled with granulated sugar (cinnamon may be optionally added) or dust with confectioners sugar while still warm.
  • 8 for a festive look, drizzle with confectioners icing and sprinkle with colored jimmies.
  • 9 serve warm.

Strawberry Parfaits

Ingredients

  • Servings: 4
  • 500 g fresh strawberries, quartered
  • 1/4 cup brown sugar, firmly packed
  • 4 teaspoons sugar
  • 1 cup yogurt
  • 1/4 cup sour cream
  • 1/4 teaspoon orange rind, grated
  • strawberry, whole for garnish (optional)
  • fresh mint sprig (to garnish) (optional)

Recipe

  • 1 in a medium bowl combine the strawberries, brown and sugar. mix well. stand misture until the sugars dissolve and strawberries release their juices [about 20 minutes].
  • 2 in a small bowl, combine yogurt, sour cream and orange rind.
  • 3 spoon one third of the berry mixture into 4 parfait glasses, dividing equally. top each with 2 tablespoons of the yogurt mixture. repeat with another lay of berry mixture and yogurt mixture.
  • 4 spoon remining berry mixture over yogurt, dividing it evenly. top each with 1 tablespoon of yogurt mixture. decorate with whole berries and mint springs.
  • 5 serve immediately.

Olive Tapenade: Charles Street Cafe

  • 1 pulse the above , adding a bit of olive oil at each pulse--.

Jack Fry's Key Lime Pie Ice Cream

  • 1 in a heavy saucepan, bring cream to a simmer. place the egg yolks in a bowl.

Olive Oil Braised Potatoes

  • 1 heat oil in a wide skillet to a smoking point. add onion, green chillies and tomatoes. cook them to soft brown mush. remove the contents to a plate.
  • 2 add the spinach to the skillet, and saute until the leaves collapse. remove to a plate and wait for at least 5 to 10 minutes for them to cool down.
  • 3 take the cooled onion, chillies, tomatoes and spinach in a blender. add a pinch of salt. blend to thick puree. set it aside.
  • 4 clean or wipe the same skillet and then add and heat oil. add and toast the cumin. add the spinach-tomato puree. sprinkle the powdered poppy seeds, kasuri methi, garam masala, salt and turmeric. along with about a cup of water. stir well. add the tofu cubes. simmer on low heat for about ten minutes. serve warm.

Lemony Potatoes With Spinach

  • 2 tablespoons olive oil
  • 1 teaspoon mustard seeds or 1 teaspoon onion seeds or 1 teaspoon celery seeds or 1 teaspoon poppy seed

  • 2 tablespoons garlic, crushed (or garlic paste)
  • 1 tablespoon ginger, crushed (or ginger paste)
  • 2 lbs potatoes, cubed (peeled or not, as your preference)
  • 1 teaspoon red chili powder

  • 1/2 cup lemon juice
  • 1 cup water
  • 1/2-1 lb fresh spinach (amount to your preference)

  • 1 place olive oil in pan with seeds of your choice. cover and allow to come to a simmering fry on high heat. once frying, add sliced onion, crushed garlic and crushed ginger. allow to fry at a medium-high heat until onions are transparent, but not browning.
  • 2 add cubed potatoes to top of frying mixture, sprinkle potatoes with chili powder and salt and stir. allow to fry on medium heat for approximately 5 minutes, stirring often.
  • 3 add lemon juice and water to potatoes and stir well. allow potatoes to cook with lid on pot until done, stirring occassionally. once potatoes are cooked, but still firm, cover top of potatoes with fresh spinach and add lid to pot. reduce heat to medium-low and allow spinach to wilt. once spinach is wilted, stir throughout potatoes and serve as a hot side.

  • 1 before starting, make sure your work station is as clean as possible. have clean utensils and pots -- the pots you are putting your product in have been cleaned. you want to keep your finished product to stay as sterile as possible.
  • 2 combine all the ingredients and heat until just melted, roughly 3 - 4 minutes. do not let the mixture come to a boil. vitamin e and essential oils are heat sensitive, so let the mixture cool down until warm to the touch, then add them. work quickly to pour the balm into the pots.
  • 3 let stand, undisturbed until the mixture solidify.
  • 4 this recipe could be cut into half.
  • 5 vitamin e has it's own healing properties, but it is used here as a preservative. with any home products, there is a shelf life of roughly 2 years. i date my finished product -- but i have usually used it up by then!

Migas De Guerrero

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 4 corn tortillas
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon adobo seasoning
  • 8 large eggs
  • 4 ounces cheddar cheese, grated
  • 1/2 onion
  • 2 tomatoes
  • 1 tablespoon butter
  • 1 jalapeno (optional)

Recipe

  • 1 cut tortillas into thin strips.
  • 2 align tortilla strips in frying pan and drizzle with olive oil. sprinkle with salt and penzey's adobo seasoning (a mixture of onion, garlic, tellicherry black pepper, mexican oregano, cumin, and cayenne pepper).
  • 3 panfry tortilla strips until slightly crispy.
  • 4 remove from pan and drain on paper towel. set aside.
  • 5 grate cheese (can use monterrey jack if desired).
  • 6 wash, peel and small dice onion. wash, seed, and small dice tomatoes and optional jalapeno.
  • 7 in a bowl, whisk eggs with a few tablespoons of cold water.
  • 8 in a clean skillet, heat butter over medium heat.
  • 9 after the butter melts, saute onions, tomatoes, and jalapeno until soft.
  • 10 pour egg mixture into the skillet, mixing in with the onions, tomatoes, and jalapeno. allow eggs to cook half-way.
  • 11 top with grated cheese and tortilla chips. continue to scramble.
  • 12 cover with lid and remove from heat to continue cooking for 2-3 minutes.

Lemony Grilled Asparagus

  • 3 lbs asparagus (seems like a lot but grilled asparagus shrinks quite a bit)
  • 3 lemons, zest and juice
  • extra virgin olive oil, as needed for tossing and drizzling

Recipe

  • 1 wash asparagus and cut off woody bottoms. wash and scrub the lemons since will be using the zest. using a microplaner or fine grater zest the lemons. be careful to only get the yellow skin and not the part underneath as it is bitter. cut lemons in half and juice. drizzle the asparagus with olive oil and about 1/2 the lemon juice. toss to coat well. grill, turning often until grill marks appear and slightly soft. just before serving drizzle with a little more lemon juice to taste and if you wish, a little more olive oil. sprinkle with lemon zest and course sea salt to taste.

Fruit Skewers For Children (and Adults Too!) - Child Safe

  • 4 kiwi fruits, peeled and cut in half across the width

  • 2 thread onto the ice-cream sticks. first the strawberries, then pineapple and lastly the kiwifruits.

  • 2 meanwhile, prepare the fruit by chopping each to a good salsa size which depends upon your judgment. combine fruit and the juice of one orange and blend well.
  • 3 use the chips to scoop up the fruit salsa. to make these extra-enticing, you can spread the chips with mascarpone before topping them with fruit, if you wish.

  • 6 garlic cloves, finely chopped
  • 1 jalapenos or 1 serrano pepper, deseeded and finely diced
  • 2 tablespoons butter

  • 6 ripe tomatoes, coarsely chopped
  • 8 eggs, lightly beaten
  • 8 -10 soft corn tortillas, cut into strips and fried until crisp (or an equal amount unsalted tortilla chips)
  • 4 tablespoons fresh cilantro, chopped
  • 3 -4 scallions, thinly sliced
  • mild chili powder, to garnish

  • 1 melt half the butter in a pan. add the garlic and chili and cook until softened but not browned. add the cumin and cook for just 30 seconds then add the tomatoes and cook over a medium heat for an additional 3-4 minutes until the tomato juices have evaporated. remove from the pan and set aside.
  • 2 melt the remaining butter in a skillet over a low heat and pour in the beaten eggs. cook, stirring, until eggs begin to set.
  • 3 add the reserved chili tomato mixture, stirring gently to mix into the eggs.
  • 4 carefully add the tortilla strips (or chips) and continue cooking, stirring once or twice, until the eggs are the consistency you wish. the tortillas should be pliable and chewy.
  • 5 transfer to a serving plate and surround with the fresh cilantro and green onions. garnish with a sprinkling of mild chili powder and serve.

  • 1 place the potatoes, garlic, and salt into a large saucepan and add enough water to cover the potatoes.

  • 4 mash the potatoes and garlic with the tines of a fork, making sure to mash each piece of potato and garlic.

Olive Oil Ice Cream

  • 1 cup greek extra virgin olive oil
  • 8 egg yolks
  • 2 cinnamon sticks
  • 1 vanilla bean, split and scraped
  • 1 1/2 cups sugar

Recipe

  • 1 in a thick, bottomed sauce pan add 3 cups of the cream and cinnamon sticks.
  • 2 scrape the seeds of the split vanilla bean into the mixture and add the beans.
  • 3 bring to boil and remove from heat.
  • 4 set aside to cool for one hour.
  • 5 in an electric mixer at high speed, whip the egg yolks and 1 cup of sugar until the mixture becomes pale and creamy.
  • 6 strain the cream and discard the cinnamon and vanilla bean.
  • 7 heat the cream over very low heat.
  • 8 whisk constantly and slowly add the egg mixture, stirring until the mixture coats the back of a spoon or until it starts to froth.
  • 9 chill for two hours.
  • 10 whip remaining cream and sugar.
  • 11 fold into chilled cream mixture and then whisk in olive oil well.
  • 12 put in ice cream churner. you may have to do it in two batches or halve this mixture for a domestic churner.

Midori-honeydew Mousse

  • 1 large cubed honeydew melon
  • 1/2 cup sugar

Recipe

  • 1 place the midori in a small heavy saucepan and sprinkle the gelatin over it.
  • 2 let the gelatin sit for a minute to soften, then place the pan over low heat.
  • 3 cook, stirring constantly, until the gelatin is dissolved.
  • 4 remove the pan from the heat and cool to room temperature.
  • 5 in small batches, puree the melon until smooth and add the pureed melon to a large bowl.
  • 6 with a whisk, beat in the midori mixture, sugar, and lemon juice until smooth and well mixed.
  • 7 with chilled beaters in a clean bowl, whip the heavy cream until soft peaks form.
  • 8 fold the whipped cream into the honeydew mixture.

Glazed Blueberry Breakfast Rolls

  • 1 put the milk and cream in a saucepan and bring slowly to the boil.
  • 2 meanwhile whisk together the egg yolks and sugar until pale and creamy.
  • 3 as soon as the milk and cream mixture comes to the boil, pour onto the egg mixture and beat well.
  • 4 return to the pan and place over a very gentle heat (or in a basin over a pan of simmering water) and stir continuously until the custard has thickened. serve hot.
  • 5 should you need to keep the custard warm, lay a piece of greaseproof paper on the surface to stop a skin forming.

  • 4 shap into a 3cm thick log and wrap in baking paper and chill for 1 hour or until firm.
  • 5 preheat oven to 160c (140c fan forced).
  • 6 grease and line a baking tray with baking paper.
  • 7 cut log into 1cm thick slices and place on prepared tray (biscuits don't spread, but leave a little room).
  • 8 press remaining parmesan into top of biscuits.

Fruit Skewers With Maple Sauce

  • 1 clean and thin slice mushrooms; set aside.
  • 2 in a heavy fry pan on medium heat, melt butter and oil and saute garlic and onion for 2 minutes.

  • 4 cover and cook until the mushrooms have wilted down and released their liquid, approximately 10 minutes.
  • 5 uncover to reduce liquid by 1/2 to intensify flavors.

  • 7 adjust seasoning to taste.
  • 8 remove from heat.
  • 9 this can be prepared ahead of time and reheated without losing the freshness.
  • 10 this dish freezes well too.

Spinach Roman Style

  • 3 tablespoons raisins (black or golden, smallest available)
  • 4 bunches spinach, bunches washed at least twice but not dried, trimmed of stems (2 1/2 pounds untrimmed)
  • 1 tablespoon virgin olive oil
  • 5 medium garlic cloves, peeled and well crushed
  • 4 tablespoons pine nuts
  • 1 pinch salt (big pinch)
  • fresh black pepper (6-7 grindings)

Recipe

  • 1 put the raisins in a small bowl with enough warm water to cover. soak for about 15 minutes and set aside.
  • 2 put the wet spinach in a frying pan large enough to hold it all and cook over a high flame until it collapses and turns dark green, stirring constantly. transfer the spinach to a colander and set aside. if the frying pan is wet, dry it with a paper towel.
  • 3 pour olive oil into the frying pan over medium-high heat. add garlic and brown it, being careful it doesn't burn. remove and discard. take the raisins from the water, squeeze as dry as possible and add them to the oil with the pine nuts. turn the heat down to medium and cook until the nuts turn a golden color. be careful because the nuts can burn easily.
  • 4 return spinach to the pan, stir with a fork and add salt and pepper, to taste. mix all ingredients and continue cooking for about a minute. you may add additional olive oil if desired.

Old Fashioned Peanut Butter Roll Candy

  • 1 cook sugar, syrup and water without stirring, until forms soft ball or a 6 inch hair when spoon is lifted out of hot syrup. have egg whites beaten and very slowly pour hot syrup into the whites while beating at the same time. continue beating until can hardly turn by hand and it looses its gloss.
  • 2 quickly spread on buttered and powdered sugar board. roll with roller carefully and spread peanut butter that has been softened by setting in pan of hot water the jar of peanut butter. after spreading the peanut butter on the candy roll and slice. the candy can be colored green while beating for a pretty look for christmas.

  • 3 meanwhile, combine 1 cup sliced berries and 2/3 cup of water in saucepan and cook until it comes to a boil.
  • 4 blend together the sugar, cornstarch and 1/3 cup water. mix well and then pour into above boiling mixture, stirring constantly while boiling.
  • 5 cook for 1 minute and then pour over the berries in pie pan.
  • 6 refrigerate at least 1 hour. serve with whipped cream if desired.

Recipe

  • 1 place 1 quart of the fresh whole strawberries into the baked pie crust.
  • 2 mash the remaining quart of berries.
  • 3 mix the sugar and cornstarch together and add it to the mashed berries.
  • 4 bring the mixture to a boil over medium to medium high heat, stirring constantly. cook until the mixture thickens and clears.
  • 5 cool mixture slightly.
  • 6 pour mixture over the strawberries in the pie crust. chill several hours.
