Easy Chicken Pot Pie

Total Time: 50 mins Preparation Time: 5 mins Cook Time: 45 mins

Ingredients

  • Servings: 4
  • 3 cups cooked chicken
  • 1 (15 ounce) can veg-all, well drained (diced, mixed vegetables)
  • 1 (10 1/4 ounce) can cream of chicken soup, undiluted
  • 1 cup chicken broth
  • 1/4 teaspoon pepper
  • 1 cup bisquick
  • 3/4 cup milk
  • 1/4 cup butter, melted

Recipe

  • 1 preheat oven to 400 degrees.
  • 2 grease a shallow 2 quart baking dish.
  • 3 spread chicken and veg-all evenly into bottom of dish.
  • 4 stir soup, broth and pepper together in a medium bowl.
  • 5 pour over chicken mixture.
  • 6 combine bisquick, milk and butter.
  • 7 stir until smooth.
  • 8 pour over soup.
  • 9 bake 45-50 minutes, or until crust is golden brown.
  • 10 cool 10 minutes before serving.

Easy Chicken Tagine/tajine With Olives And Lemon

Ingredients

  • 1 1/2 lbs skinless chicken breast halves
  • 2 skinless chicken leg quarters (about 1 pound)
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • 3 garlic cloves, minced

Recipe

  • 1 mix together the chicken, onion, cream cheese, salt, milk, and butter.
  • 2 spoon crescent rolls and roll up.

  • 4 mix together and heat the sour cream and soup.
  • 5 spoon over roll-ups and enjoy!

Easy Chicken Tikka Masala

Ingredients

  • 2 small onions
  • 5 garlic cloves, finely minced
  • seeds from 10 cardamom pod (or 1 tsp ground)
  • 1 teaspoon peppercorn
  • 2 tablespoons coriander seeds
  • 1 tablespoon cumin seed
  • 2 teaspoons red pepper flakes
  • 1 tablespoon paprika
  • 4 tablespoons butter, divided
  • 2 teaspoons ground ginger
  • 1 teaspoon garam masala (optional, but i love it)
  • 1 tablespoon sweet paprika
  • 14 ounces diced tomatoes
  • 1/2 cup yogurt (i use fat free)
  • 3/4 cup half-and-half cream
  • 1 1/8 lbs chicken breasts, cut into 1 inch pieces

Recipe

  • 1 make your spice blend: put the cardamom seeds, peppercorns, coriander seeds, cumin and pepper flakes in a spice grinder and -- grind.
  • 2 melt 2 tbsp butter in a large skillet. saute onions until they begin to caramelize.
  • 3 add garlic and cook for another 2-3 minutes.
  • 4 add your spice blend, ginger, garam masala (if using) and paprika.
  • 5 stir everything together until it's well combined and let it all mix together in the skillet for a few minutes.
  • 6 add tomatoes and water and stir everything together. turn your heat down and simmer for about 10-15 minutes - it will thicken up a little and reduce.
  • 7 whisk the yogurt into the sauce, then add the remaining 2 tbsp of butter and the half and half, and whisk everything together.
  • 8 when the sauce is simmering again, add the chicken pieces and let it simmer until they are completely cooked.(about 10 minutes).
  • 9 serve over rice, hopefully with some kind of bread to sop up all the sauce.

  • 1 onion
  • 1 teaspoon butter
  • 1 chicken fillet
  • 3 tablespoons peanut butter
  • 2 teaspoons curry powder
  • 1 cup chicken stock

Recipe

  • 1 chop the garlic and onion.
  • 2 place butter, garlic and onion in microwave proof dish and cook on high for 1 minute.
  • 3 add peanut butter, curry powder, ‘something spicy’ and chicken stock and cook on high for 4 minutes; stopping after 2 minutes and stirring.
  • 4 cut chicken into pieces and add to peanut sauce mixture.
  • 5 cook on high a further 2 minutes.
  • 6 serve with steamed rice.

Easy Chicken Teriyaki With Linguine

Ingredients

  • 1 lb linguine, broken in half (can use less pasta if desired)
  • 2 tablespoons sesame oil
  • 3 -4 tablespoons vegetable oil
  • 4 boneless skinless chicken breasts (cut lengthwise into about 1/3-inch strips)
  • salt and pepper
  • 10 green onions, chopped to about 1-inch pieces
  • 2 large carrots, peeled and sliced paper thin diagonally
  • 1/2 teaspoon dried red pepper flakes (or to taste)
  • 3/4 cup purchased teriyaki sauce (or to taste)

  • 1 cook noodles in a large pot of salted boiling water until just firm-tender; drain and return to pot.
  • 2 add in the sesame oil; toss to coat.
  • 3 in a skillet or wok heat oil over high heat.
  • 4 sprinkle the chicken strips with salt and pepper, then add to the skillet; sauté until no longer pink (about 2 minutes).
  • 5 add in green onions, sliced carrots and crushed red pepper flakes; stir-fry until veggies are crisp-tender but still bright in colour and the chicken is cooked through (about 2-3 minutes longer).
  • 6 add in the cooked noodles and teriyaki sauce; toss well to blend.

Easy Chicken Stir Fry And Baked Spring Rolls

Total Time: 40 mins Preparation Time: 20 mins Cook Time: 20 mins

Ingredients

  • 1 1/2 cups chicken breasts, sliced thinly
  • 1 tablespoon olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon garlic, minced
  • 1/4 teaspoon red pepper flakes
  • 1 tablespoon dried basil
  • 1 cup shoestring carrots
  • 1 cup sweet red pepper, thinly sliced
  • 1 cup celery, sliced
  • 2 cups bean sprouts, rinsed and drained
  • 1/2 cup green onion, sliced
  • 1 cup frozen peas, thawed
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon cornstarch
  • 1 tablespoon cold water
  • 1/4 cup sweet chili sauce
  • 15 phyllo pastry sheets, cut in half
  • cooking spray

Recipe

  • 1 in a small bowl mix chicken slices, olive oil, soy sauce, garlic, red pepper flakes and basil. cover and refrigerate for at least 1 hour but no longer than 24.
  • 2 heat a large skillet to a medium high heat. add the marinaded chicken, saute until lightly browned.
  • 3 add carrots, sweet red peppers and celery. continue to cook until vegetables begin to softened.
  • 4 add bean sprouts, onions, peas, salt and black pepper. mix cornstarch with water and set aside.
  • 5 once the bean sprouts have softened to your liking, add the cornstarch mixture to thicken the juices.
  • 6 stir in the sweet chili sauce and serve.
  • 7 preparing spring rolls:.
  • 8 allow mixture to cool, for easier handling.
  • 9 work with one phyllo leaf at a time. keep the remainder covered with a damp cloth or plastic wrap. they will dry out quickly if not.
  • 10 sheets should be cut in half horizontally. lay one sheet out on the counter and give a light coating of cooking spray (or brush with melted butter). fold in half with the short sides together.
  • 11 with the short side towards you, place 2 tbsp (or to your liking) of mixture the lower third of the phyllo leaf. bring the bottom up over the mixture, then fold in each side. again, lightly coat with cooking spray. roll tightly, and lay on a baking sheet with the seam side down. continue in this manner until all the mixture has been used. give another light coating of cooking spray. at this point, you can freeze them for later use or continue on to bake. with the full recipe, i've been able to make 30 spring rolls.

  • 4 drain the carrots and peas, then add them to the soup blend.
  • 5 slice the boiled chicken into 1/2 inch chunks and stir it into the soup-vegetable blend.
  • 6 assemble 5, 5-inch ramekins or similar oven-proof bowls and spray them with pam.
  • 7 distribute the mix among the 5 bowls evenly. fill to about 3/4 of an inch from the top edges.
  • 8 melt the butter and pour an equal amount on top of the mix of each filled ramekin. use all the butter.
  • 9 in another mixing bowl, mix the flour, baking powder, white pepper and milk.
  • 10 when the flour mix is slightly thicker than pancake batter and smooth (you may have to add an additional 2 or 3 tablespoons of milk), distribute the batter on top of the butter in each of the five bowls. do not stir the butter or the batter into the soup mix!
  • 11 slightly spread the batter across the tops, using a tablespoon to do so. do not bother to spread the batter from edge to edge.

  • preheat oven to 350 degrees f (175 degrees c). grease one 9x13 inch baking pan.

  • 1 medium yellow onion, chopped
  • 1 cup celery, chopped
  • 5 white potatoes, unpeeled and diced
  • 1 red bell pepper, chopped
  • 10 3/4 ounces cream of chicken soup
  • 10 3/4 ounces cream of celery soup
  • 1 cup sour cream
  • 1 tablespoon basil
  • 1 teaspoon red pepper flakes
  • 1/2 teaspoon pepper
  • 1 teaspoon salt
  • 3 garlic cloves, crushed
  • 16 1/3 ounces pillsbury grands flakey biscuits

Recipe

  • 1 in a large stock pot, bring water with chicken flavored bouillon to a boil.
  • 2 add chicken breast and cook until done. cool and shred.
  • 3 in same water, add basil, pepper flakes, salt and pepper, and garlic cloves, potatoes, carrots, celery, red bell pepper and onion and cook until almost done.
  • 4 return chicken to same pot with these ingredients keeping at a medium low heat.
  • 5 in a separate bowl, combine cream of celery soup, cream of chicken soup, and sour cream.
  • 6 slowly fold into chicken and vegetable mixture.
  • 7 if the sauce does not seem thick enough to your liking, in a separate saucepan make a white sauce by melting 1/4 c butter, adding 1/4 c flour and stirring constantly until made into paste. add 1/2 & 1/2 or milk, stirring constantly until desired thickness is achieved. add a small amount at a time to chicken mixture, stirring constantly, until desired thickness.
  • 8 pour approximately 1/3 of chicken mixture into an 8 x 8 casserole dish. repeat with remaining chicken mixture for later use -- or cool this mixture completely and then separate into (2) ziploc freezer bags. label and date bags to thaw and bake later.
  • 9 if you are ready to bake your casserole as soon as you have made the chicken mixture: layer with biscuits and bake at 350 for approx 15-20 minutes or until biscuits are golden brown.
  • 10 if, however, you are making this dish ahead of time, then refrigerate in casserole dish until ready to bake; approx one hour before eating.
  • 11 bake, covered, chicken mixture only, at 350 for approximately 50 minutes or until hot all the way through.
  • 12 layer with biscuits and return to oven for approx 15-20 minutes longer, or until biscuits are golden brown.

  • 3 add salt and pepper to taste, if desired.
  • 4 blend biscuit mix and add 1/2 cup milk and beaten egg, stirring until smooth.
  • 5 pour batter over top of pie filling.
