Dk's Stuffed Green Peppers

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 4
  • 4 bell peppers
  • 1 lb lean ground beef
  • 2 cups chopped kale
  • 1/2 onion, chopped
  • 1 (16 ounce) can diced tomatoes
  • 1/2 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon basil
  • 1 tablespoon worcestershire sauce
  • 1 (4 ounce) can tomato sauce

Recipe

  • 1 cut tops from peppers.
  • 2 rinse peppers and submerge in boiling water for 5 minutes. drain. sprinkle the inside with salt.
  • 3 chop reserved pepper tops and saute with the ground beef. add chopped onion and kale. cook until beef is well done.
  • 4 stir in tomatoes, oregano, salt, basil and worcheshire sauce.
  • 5 simmer 10 minutes.
  • 6 place peppers in greased 8"x8" dish. spoon filling evenly into peppers. pour tomato sauce over peppers. cover with foil and bake for 30 minutes.
