Honeydew Basil Nojitos

Ingredients

- 1/2 cup large fresh basil leaf, torn
- 1/2 cup lime juice
- 2 teaspoons granulated sugar
- 6 lbs honeydew melon, peeled, seeded and cubed
- lime wedge (optional)
- superfine sugar (optional)
- ice cube
- carbonated water (optional)
- honeydew balls (optional) or honeydew, spears (optional)
Recipe
- 1 in a large pitcher combine basil leaves, lime juice, and 2 tsp granulated sugar.
- 2 using a muddler or the back of a spoon, mash ingredients together well making sure that the sugar is dissolved.
- 3 set aside.
- 4 place about 1/4 of the melon cubes in a food processor or blender.
- 5 cover and process until smooth.
- 6 press puree through a fine mesh sieve.
- 7 discard solids.
- 8 repeat with remaining melon, working with 1/4 at a time.
- 9 you should end up with 4 cups melon juice total.
- 10 add melon juice to pitcher.
- 11 if desired, rub a lime wedge around the rim of eight glasses and dip rim in superfine sugar.
- 12 fill glasses with ice.
- 13 pour juice mixture into glasses.
- 14 if desired, add a splash of carbonated water to each glass.
- 15 if desire garnish with melon balls or spears.
- 16 serve immediately.
