Dorothy's Convent Meatloaf With Potatoes

Total Time: 1 hr 50 mins Preparation Time: 20 mins Cook Time: 1 hr 30 mins

Ingredients

  • 2 lbs ground beef
  • 1 small onion, diced
  • 1 cup soda cracker crumbs
  • salt
  • pepper
  • 2 eggs
  • 1 tablespoon worcestershire sauce
  • 2/3 cup milk
  • 6 -8 medium potatoes
  • 1 (10 3/4 ounce) can cream of tomato soup
  • 0.5 (14 ounce) can milk

Recipe

  • 1 mix together meat, onion, crumbs, 1 teaspoon salt (or to taste), 1/8 teaspoon pepper, eggs, worcestershire sauce and 2/3 cup milk.
  • 2 form into oval shaped loaf.
  • 3 slice potatoes into bottom of 3 quart baking dish, adding salt and pepper to taste.
  • 4 place meatloaf on top of raw potatoes.
  • 5 mix soup with 1/2 soup can milk; bring to boil and pour over meatloaf.
  • 6 bake in 350 degree oven 1 1/2 hours, covered.
  • 7 uncover and bake 15 minutes more to brown meat.
