Dirty Rice With Turkey Sausage

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 6
  • 2 tablespoons vegetable oil
  • 1 lb turkey breakfast sausage
  • 1 cup onion, chopped
  • 1 cup celery & leaves, chopped
  • 1 cup green bell pepper, chopped
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon cayenne pepper
  • 2 cups long-grain white rice
  • 2 cups chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1/2 cup green onion, chopped

Recipe

  • 1 in large skillet, heat oil over medium heat.
  • 2 add sausage; cook about 10 minutes or until no longer pink, stirring occasionally to break up sausage.
  • 3 add onions, celery, bell pepper, thyme and cayenne.
  • 4 cook about 5 minutes or until vegetables are soft.
  • 5 add rice; stir and cook about 1 minute.
  • 6 add broth and tomatoes; bring to a simmer and cook, covered, over low heat about 20 minutes or until liquid is absorbed.
  • 7 stir in green onions.
