Ingredients

- 2 tablespoons butter
- 2 garlic cloves, pressed
- 1 1/2 cups milk
- 1 cup shredded parmesan cheese, divided
- 8 ounces cream cheese, softened
- 8 ounces mascarpone cheese
- 4 ounces gorgonzola
- 1 teaspoon salt
- 1 teaspoon white pepper
- 1/4 teaspoon ground nutmeg
- 10 ounces frozen chopped spinach, thawed and drained
- 16 ounces penne, cooked
- 1 cup soft breadcrumbs
Recipe
- 1 melt butter in a dutch oven over medium heat.
- 2 add garlic, and saute until tender.
- 3 add milk, and cook until thoroughly heated.
- 4 gradually stir in 1/2 c parmesan cheese and next 6 ingredients until smooth.
- 5 stir in spinach.
- 6 add pasta, tossing to coat.
- 7 spoon into a lightly greased 13 x 9 baking dish.
- 8 bake at 400 for 7 minutes.
- 9 remove from oven; sprinkle with remaining 1/2 c parmesan cheese and breadcrumbs.
- 10 reduce oven temp to 350 and bake for 20 minutes.
