grilled globe squash

Ingredients

  • Servings: 4
  • 1/4 cup extra-virgin olive oil
  • 2 tablespoons white vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 4 baseball-size globe squash, cut into 1/2-inch thick slices

Recipe

    Preparation Time: 10 mins Cook Time: 10 mins Ready Time: 30 mins

  • mix olive oil, vinegar, salt, and black pepper in a large bowl; add squash and toss to coat. marinate for 10 minutes.
  • preheat an outdoor grill for high heat and lightly oil the grate.
  • arrange squash slices on the preheated grill and cook until tender and lightly browned, about 3 minutes per side.
