Ingredients
- Servings: 4
- 1 teaspoon dijon mustard
- 3 tablespoons balsamic vinegar
- 3 tablespoons extra virgin olive oil
- 2 tablespoons walnut oil
- salt and pepper
- 10 cups mixed salad greens
- 1/2 cup sun-dried tomato packed in oil (chopped)
- 1/2 cup walnuts (chopped) or 1/2 cup pecans (chopped)
- 3 ounces fresh goat cheese
Recipe
- 1 in a small bowl, whisk together the mustard and vinegar. whisk in the olive oil and walnut oil, and season to taste with salt and pepper.
- 2 in a large bowl, toss together the salad greens and sun-dried tomatoes.
- 3 drizzle with the dressing and toss again.
- 4 scatter the nuts over the salad, and crumble cheese on top.
- 5 serve at once.
