Spicy Tofu Scrambles With Greens

Total Time: 21 mins Preparation Time: 15 mins Cook Time: 6 mins

Ingredients

  • Servings: 2
  • 1 tablespoon extra virgin olive oil
  • 1/2 cup onion, diced
  • 1 garlic clove, pressed
  • 1/2 medium tomato, chopped
  • 5 kalamata olives, chopped
  • 3 kale leaves, chopped
  • 1/4 teaspoon red pepper flakes
  • 8 ounces firm tofu, drained* and crumbled
  • 1 tablespoon naturally brewed soy sauce

Recipe

  • 1 coat a large frying pan with the olive oil and place over medium heat.
  • 2 add the onion and sauté until tender about 4 minutes, then add garlic, tomato, olives and sauté a minute more.
  • 3 add chopped kale and red pepper flakes, stir and cover frying pan and let steam for three minutes, stirring once or twice.
  • 4 add crumbled tofu to pan and pour over the soy sauce. stir to combine well and keep on heat until tofu is heated all the way through, then serve.
