Scrambled Veggie Omelet

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • Servings: 3
  • 4 eggs
  • 1/4 cup onion, chopped
  • 1/4 cup mushroom, chopped
  • 1/8 cup bell pepper, chopped
  • 1/8 cup tomato, chopped
  • 2 tablespoons milk
  • 1 tablespoon water
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon garlic powder
  • 1 teaspoon fresh parsley
  • 1 1/2 teaspoons margarine or 1 1/2 teaspoons butter

Recipe

  • 1 saute mushrooms, onions, and peppers in margarine until almost done, add tomatoes and cook for 1 minute.
  • 2 mix remaining ingredients together and pour in pan with sauteed veggies.
  • 3 cook on medium heat until no longer runny.
  • 4 serve with toast and fruit for a delicious start to your day.
