Honey Ginger Feijoa Frozen Yogurt

Ingredients

  • Servings: 4
  • 5 guavas (feijoas)
  • 1 teaspoon lemon juice
  • 1/2 teaspoon fresh gingerroot, grated
  • 1/2 cup granulated sugar
  • 2 teaspoons cornstarch
  • 1 1/4 cups 1% low-fat milk
  • 1/4 cup honey
  • 1 cup plain low-fat yogurt, stirred

Recipe

  • 1 halve the feijoas; scoop out the pulp and discard the shell.
  • 2 in a blender or food processor fitted with a metal blade, puree the feijoa pulp, lemon juice and ginger.
  • 3 in a medium saucepan, combine the sugar and cornstarch; stir in the milk and honey.
  • 4 cook and stir until the mixture simmers.
  • 5 cook for 1 minute longer; remove from the heat.
  • 6 add the pureed feijoas.
  • 7 stir in the yogurt.
  • 8 freeze in an ice cream maker according to the manufacturer's directions.
