Do-ahead Fries

Total Time: 13 mins Preparation Time: 10 mins Cook Time: 3 mins

Ingredients

  • Servings: 4
  • 3 large potatoes
  • 1 teaspoon salt
  • oil (for deep frying)

Recipe

  • 1 peel potatoes and cut into french fry strips.
  • 2 drop into a bowl covered with water in which the salt has been added.
  • 3 drain and pat dry.
  • 4 heat oil to 400*.
  • 5 fry the potato strips for 1 minute (do this in batches if necessary).
  • 6 drain on paper towels.
  • 7 cover and refrigerate until ready to use.
  • 8 to finish, fry the potatoes an additional 2-3 minutes at 400*, until golden.
