Dilled Carrot Soup

Ingredients
- Servings: 6
- 3 cups chicken broth
- 1 (14 1/2 ounce) can diced tomatoes
- 1 lb carrot, sliced
- 1 1/2 cups chopped onions
- 1 medium idaho potato, peeled and cubed
- 2 garlic cloves, minced
- 1 1/2 teaspoons dill
- 2 -3 tablespoons lemon juice
- salt and pepper
- 6 tablespoons plain yogurt
Recipe
- 1 combine all ingredients, except lemon juice, salt, pepper and yogurt in slow cooker.
- 2 cover and cook on high 3-4 hours.
- 3 process soup in food processor or blender until smooth.
- 4 season to taste with lemon juice, salt and pepper. serve soup warm or chilled and garnished with a dollop of yogurt.
