Dilled Carrot Soup

Total Time: 3 hrs 10 mins Preparation Time: 10 mins Cook Time: 3 hrs

Ingredients

  • Servings: 6
  • 3 cups chicken broth
  • 1 (14 1/2 ounce) can diced tomatoes
  • 1 lb carrot, sliced
  • 1 1/2 cups chopped onions
  • 1 medium idaho potato, peeled and cubed
  • 2 garlic cloves, minced
  • 1 1/2 teaspoons dill
  • 2 -3 tablespoons lemon juice
  • salt and pepper
  • 6 tablespoons plain yogurt

Recipe

  • 1 combine all ingredients, except lemon juice, salt, pepper and yogurt in slow cooker.
  • 2 cover and cook on high 3-4 hours.
  • 3 process soup in food processor or blender until smooth.
  • 4 season to taste with lemon juice, salt and pepper. serve soup warm or chilled and garnished with a dollop of yogurt.
