Dill Sweet Potato Salad

Total Time: 15 mins Preparation Time: 5 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 2 large japanese sweet potatoes
  • 1 large cucumber
  • 5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
  • 2/3 cup coconut vinegar (decrease amount if using vinegar) or 2/3 cup other vinegar (decrease amount if using vinegar)
  • 1/4 cup chopped fresh dill (or more)
  • salt and black pepper

Recipe

  • 1 cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
  • 2 they cool a bit, dice the cucumber and combine with the rest of the ingredients.
  • 3 add in cooled sweet potatoes and stir well.
  • 4 taste for salt and pepper and chill or serve room temperature.
