Dill Sweet Potato Salad

Ingredients
- Servings: 6
- 2 large japanese sweet potatoes
- 1 large cucumber
- 5 tablespoons flax seed oil (the flax oil gives it a pleasant, nutty flavor) or 5 tablespoons olive oil (the flax oil gives it a pleasant, nutty flavor)
- 2/3 cup coconut vinegar (decrease amount if using vinegar) or 2/3 cup other vinegar (decrease amount if using vinegar)
- 1/4 cup chopped fresh dill (or more)
- salt and black pepper
Recipe
- 1 cube and steam sweet potatoes 8-10 minutes, until easily pierced with a fork.
- 2 they cool a bit, dice the cucumber and combine with the rest of the ingredients.
- 3 add in cooled sweet potatoes and stir well.
- 4 taste for salt and pepper and chill or serve room temperature.
