Easy Chicken Curry

Ingredients

- 1 large onion, diced
- 2 tablespoons olive oil
- 2 tablespoons curry powder
- 1/2 cup tomato juice
- 1/2 cup red
- 2 tablespoons chutney
- 1 lb chicken breast, diced
- 1 teaspoon salt
Recipe
- 1 in nonstick skillet or wok, heat olive oil over medium heat. add onion and chicken breast and cook, stirring ocassionally, until chicken is almost cooked through.
- 2 add tomato juice, red , chutney, and salt. simmer for 10 minutes. serve with rice.
