Easy Chicken Corn Chowder

Total Time: 50 mins Preparation Time: 20 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 4 slices bacon, diced
  • 1 medium onion
  • 2 lbs boneless skinless chicken, cut into bite size pieces
  • 7 medium potatoes, peeled and chunked
  • 1 quart chicken stock
  • 1 quart milk
  • 4 cups kernel corn (frozen works just fine!)
  • salt
  • pepper

Recipe

  • 1 brown bacon bits in a large stock pot and drain leaving about 1 tbs.
  • 2 of fat and the bacon in the pot.
  • 3 turn the heat to medium and sautee onion until soft.
  • 4 add in chicken pieces and cook until opaque.
  • 5 add in potato chunks.
  • 6 add in stock and milk, if you need more milk to cover the ingredients just add a bit more.
  • 7 cook until the potatoes start to fall apart and thicken the soup.
  • 8 add in corn and cook until hot.
  • 9 season with salt and pepper to taste.
  • 10 enjoy.
