Smoky Bacon And Chipotle Sweet Potatoes

Ingredients

- 2 1/4 lbs sweet potatoes, peeled and cubed
- 4 tablespoons butter
- 1/2 cup sour cream
- 8 slices crisp cooked bacon, crumbled
- 2 tablespoons brown sugar
- 1 small chipotle chile in adobo, remove seeds and slice in small pieces
- 1 cup sharp cheddar cheese, grated
- 1/2 cup pecans, chopped and toasted
Recipe
- 1 cover potatoes in a saucepan and cover with water. bring to a boil. cook until tender and then drain.
- 2 mash potatoes, add butter, sour cream, sugar, cheese, chipotle pepper and bacon; mix well.
- 3 adjust seasoning with salt and black pepper.
- 4 top with toasted pecans just before serving.
