Smoky Bacon And Chipotle Sweet Potatoes

Ingredients

  • Servings: 6
  • 2 1/4 lbs sweet potatoes, peeled and cubed
  • 4 tablespoons butter
  • 1/2 cup sour cream
  • 8 slices crisp cooked bacon, crumbled
  • 2 tablespoons brown sugar
  • 1 small chipotle chile in adobo, remove seeds and slice in small pieces
  • 1 cup sharp cheddar cheese, grated
  • 1/2 cup pecans, chopped and toasted

Recipe

  • 1 cover potatoes in a saucepan and cover with water. bring to a boil. cook until tender and then drain.
  • 2 mash potatoes, add butter, sour cream, sugar, cheese, chipotle pepper and bacon; mix well.
  • 3 adjust seasoning with salt and black pepper.
  • 4 top with toasted pecans just before serving.
