Honey Ginger Feijoa Frozen Yogurt

Ingredients

- 5 guavas (feijoas)
- 1 teaspoon lemon juice
- 1/2 teaspoon fresh gingerroot, grated
- 1/2 cup granulated sugar
- 2 teaspoons cornstarch
- 1 1/4 cups 1% low-fat milk
- 1/4 cup honey
- 1 cup plain low-fat yogurt, stirred
Recipe
- 1 halve the feijoas; scoop out the pulp and discard the shell.
- 2 in a blender or food processor fitted with a metal blade, puree the feijoa pulp, lemon juice and ginger.
- 3 in a medium saucepan, combine the sugar and cornstarch; stir in the milk and honey.
- 4 cook and stir until the mixture simmers.
- 5 cook for 1 minute longer; remove from the heat.
- 6 add the pureed feijoas.
- 7 stir in the yogurt.
- 8 freeze in an ice cream maker according to the manufacturer's directions.
