Mashed Potatoes

Ingredients

- 5 lbs baking potatoes (about 10 large)
- 2 teaspoons salt
- 1 1/2 cups half-and-half or 1 1/2 cups milk
- 6 tablespoons butter
- 1/4 teaspoon black pepper
- 1/4 teaspoon ground nutmeg
- 1/2 cup fresh parsley, chopped
Recipe
- 1 peel potatoes.
- 2 cut into 1 1/2 inch chunks, dropping into a large saucepan half filled with cold water.
- 3 add 1/2 teaspoon salt.
- 4 bring to boiling and boil, partially covered, until potatoes are tender, 15 minutes.
- 5 drain and set potatoes aside.
- 6 in same saucepan, bring 1 cup milk and butter to simmering.
- 7 turn off heat.
- 8 return potatoes to pan.
- 9 add pepper, nutmeg, and remaining 1 1/2 teaspoons salt. mash.
- 10 stir in parsley and remaining 1/2 cup milk.
