Piquillo Pepper Ketchup

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • 1 tablespoon olive oil
  • 1/4 cup yellow onion, finely chopped
  • 1/2 lb plum tomato, peeled, seeded and chopped
  • 6 ounces piquillo peppers, jarred, chopped
  • 1/8 cup wine vinegar
  • 1 teaspoon honey
  • 1 garlic clove, finely chopped
  • 1/2 teaspoon fresh thyme, chopped
  • kosher salt & freshly ground black pepper

Recipe

  • 1 in a saucepan, heat 1/2 tablespoon of the olive oil over medium heat. add onion and cook until soft, about 5 minutes.
  • 2 add the tomatoes, peppers, vinegar, honey, garlic, thyme and salt and pepper to taste.
  • 3 simmer, uncovered until very thick, about 15 minutes, stirring frequently.
  • 4 in a food processor, puree until smooth and adjust seasoning as needed.
  • 5 transfer to a container and stir in the remaining ½ tablespoon olive oil.
