Mustard & Onion Relish

Ingredients

- 2 tablespoons vegetable oil
- 3 onions, peeled and sliced
- 1 garlic clove, minced
- 3 tablespoons dark brown sugar (muscovado)
- 4 tablespoons red wine vinegar
- 2 teaspoons coarse grain mustard
- salt and pepper, to taste
Recipe
- 1 fry rhe onions in the oil over a medium heat until soft and brown.
- 2 add the garlic and cook for another minute, before adding the sugar, vinegar and mustard.
- 3 bring to a boil and cook for 2-3 minutes until it starts to thicken.
- 4 season with salt and pepper to taste.
- 5 can be served hot or cold.
