Mustard & Onion Relish

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 2 tablespoons vegetable oil
  • 3 onions, peeled and sliced
  • 1 garlic clove, minced
  • 3 tablespoons dark brown sugar (muscovado)
  • 4 tablespoons red wine vinegar
  • 2 teaspoons coarse grain mustard
  • salt and pepper, to taste

Recipe

  • 1 fry rhe onions in the oil over a medium heat until soft and brown.
  • 2 add the garlic and cook for another minute, before adding the sugar, vinegar and mustard.
  • 3 bring to a boil and cook for 2-3 minutes until it starts to thicken.
  • 4 season with salt and pepper to taste.
  • 5 can be served hot or cold.
