Passionfruit Applesauce

Ingredients
- 3 lbs apples, peeled, cored and quartered (your choice of variety)
- 1/3 cup passion fruit juice, strained (or nectar)
- 1/2 vanilla bean, split
- 2 slices ginger, 1/4-inch, gently crushed
- 1/2 cup mirin
- 3 tablespoons honey (or to taste)
Recipe
- 1 place all ingredients in a heavy non-reactive saucepan over medium heat.
- 2 cover and cook until apples are very soft, 10-15 minutes. reduce temperature if apples start to boil over.
- 3 remove from heat and take out ginger and vanilla bean.
- 4 place apple mixture in food processor and puree into a smooth sauce.
