Spicy Greens With Sun-dried Tomatoes

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 1 tablespoon olive oil
  • 1/2 red onion
  • 1/2 cup sun-dried tomato, chopped, plumped in warm water
  • 2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
  • 1 garlic clove, chopped
  • 1 lb kale, trimmed and chopped
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper

Recipe

  • 1 in a large sauce pan or dutch oven, heat olive oil over medium heat. add the onion and saute until soft, about 4 minutes.
  • 2 add sun-dried tomatoes, vinegar, and garlic and mix well.
  • 3 add the greens, one third at a time, pressing them down until they begin to wilt.
  • 4 season with salt and pepper.
  • 5 reduce heat to medium low and cook, uncovered, until greens are tender, about 8 minutes.
  • 6 serve hot.
