Spicy Greens With Sun-dried Tomatoes

Ingredients
- 1 tablespoon olive oil
- 1/2 red onion
- 1/2 cup sun-dried tomato, chopped, plumped in warm water
- 2 tablespoons balsamic vinegar or 2 tablespoons red wine vinegar
- 1 garlic clove, chopped
- 1 lb kale, trimmed and chopped
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Recipe
- 1 in a large sauce pan or dutch oven, heat olive oil over medium heat. add the onion and saute until soft, about 4 minutes.
- 2 add sun-dried tomatoes, vinegar, and garlic and mix well.
- 3 add the greens, one third at a time, pressing them down until they begin to wilt.
- 4 season with salt and pepper.
- 5 reduce heat to medium low and cook, uncovered, until greens are tender, about 8 minutes.
- 6 serve hot.
