Ingredients

- 2 tablespoons olive oil
- 8 large eggs
- 4 ounces feta cheese, crumbled (1 cup)
- 1/4 cup milk
- 1/3 cup loosely packed fresh parsley or 1/3 cup basil leaves, chopped
- 2 tablespoons fresh rosemary or 2 tablespoons thyme leaves, chopped
- 1/2 teaspoon ground black pepper

- 1 1. preheat oven to 400ºf. in 10-inch, nonstick skillet with oven safe handle, heat oil over medium heat.
- 2 2. meanwhile, in medium bowl, with wire whirsk, whisk eggs, feta, parsley, milk, rosemary, and pepper until blended. pour egg mixture into skillet; do not stir. cook until egg mixture begins to set around edge, 3-4 minute.
- 3 3. place skiillet into oven. bake until frittate is set, 13-15 minute cut in wedges.
