Spinach & Mushroom Salad

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • Servings: 6
  • 1/2 lb fresh spinach, washed, stems off & dried
  • 6 ounces fresh mushrooms, cleaned, sliced
  • 1 tablespoon fresh lemon juice
  • 2 tablespoons fresh parsley, chopped

Recipe

  • 1 tear or cut the spinach leaves into small pieces.
  • 2 toss the mushrooms with the lemon juice.
  • 3 place spinach in salad bowl top with mushrooms and sprinkle with parsley.
  • 4 toss with lemon-yogurt vinagrette (lemon-yogurt vinaigrette) dressing just before serving.
