Mushroom And Leek Sauce

Total Time: 25 mins Preparation Time: 10 mins Cook Time: 15 mins

Ingredients

  • Servings: 4
  • 2 tablespoons olive oil
  • 2 cloves garlic, crushed
  • 1 small red chile, deseeded, finely chopped
  • 1 leek, halved, thinly sliced
  • 1 tablespoon plain flour
  • 400 g mushrooms, sliced
  • 375 ml evaporated milk
  • 2 tablespoons chopped fresh flat-leaf parsley

Recipe

  • 1 heat oil in a non stick frying pan over medium heat.
  • 2 add garlic, chili and leek.
  • 3 cook, stirring for 3 to 4 minutes or until soft.
  • 4 add flour and cook for 1 minute.
  • 5 increase heat to high and add mushrooms.
  • 6 cook, stirring for 3 minutes or until tender.
  • 7 add evaporated milk gradually, stirring.
  • 8 bring to the boil.
  • 9 reduce heat to medium and simmer for 4 minutes or until thickened.
  • 10 stir in parsley.
  • 11 season with salt and pepper.
  • 12 enjoy!
