Mexican Fried Corn

Total Time: 20 mins Preparation Time: 10 mins Cook Time: 10 mins

Ingredients

  • Servings: 6
  • 2 tablespoons olive oil
  • 1 small onion, finely chopped
  • 1/2 small green pepper, cut in thin rings
  • 1/2 small red pepper, cut in thin rings
  • 2 tablespoons chopped cilantro
  • 1 green chili pepper, seeded and finely chopped
  • 1 3/4 cups whole kernel corn
  • 4 ounces mushrooms, sliced
  • salt and black pepper
  • 8 fresh cilantro stems, to garnish

Recipe

  • 1 heat oil in a heavy skillet over medium heat.
  • 2 add onion, bell peppers, chopped cilantro and chile.
  • 3 cook 5 minutes, stirring occasionally or until soft.
  • 4 stir in corn, mushrooms, salt and pepper.
  • 5 cook 5 minutes, stirring occasionally.
  • 6 transfer to a warmed serving dish and garnish with cilantro.
